Monthly Meal Plan: June 2010

This month I'm hoping to eat simply, eat from our freezer, keep our purchases to a minimum (purchasing fresh produce and dairy as needed) and take advantage of sales on ground meat.  With Summertime upon us, the grocery stores will most likely have sales on fresh produce and ground meats.  If you are new to couponing, you might find my Couponing 101 series helpful.  I'm also hoping to avoid heating up the kitchen as much as possible, utilizing my stove top, electric grill, microwave and crock pot.

Here's the general idea for my monthly meal plan:

Monday - Grilled Chicken or Leftovers
Tuesday - Easy Italian
Wednesday - Breakfast for dinner
Thursday - Taco Night
Friday - Pizza Night
Saturday - Chicken
Sunday - Burgers*
This is what we're going to be eating this month:
  1. Spaghetti with Salad
  2. Breakfast:  Blueberry Muffins, Eggs, Bacon
  3. Tacos with Rice & Beans
  4. Chicken Fajita Pizza (recipes post each Friday)
  5. Rotisserie Chicken (Crock Pot) Baked Potatoes Salad (saving some chicken for 6/7/10)
  6. Salmon Burger with Oven Cheese Fries and Salad
  7. Chicken Salad with crackers and fruit (using leftover chicken from 6/5/10)
  8. Crock Pot Lasagna Roll Ups with Salad
  9. Breakfast:  Grits, Eggs, Sausage, Fruit
  10. Tacos with Rice & Beans
  11. Meat-a-tarian Pizza (recipes post each Friday)
  12. Circuit Assembly (Tuna Salad, Crackers, Fruit, Granola Bars, Chips and Cookies)
  13. Circuit Assembly (PB&J, Fruit, Granola Bars, Chips and Cookies)
  14. Asian Dump Chicken, Grilled, Rice, Broccoli and Spring Roll
  15. Spaghetti with Salad
  16. Breakfast:  Blueberry Muffins, Eggs, Bacon, Fruit
  17. Tacos with Rice & Beans
  18. Cuban Pizza (recipes post each Friday)
  19. Rotisserie Chicken (Crock Pot) Mashed Potatoes and Green Beans (saving some chicken for 6/21/10)
  20. Turkey and Black Bean Burrito Burger with Oven Cheese Fries and Salad
  21. Chicken Wreath with Salad (using leftover chicken from 6/19/10)
  22. Crock Pot Lasagna Roll Ups with Salad
  23. Breakfast:  Grits, Eggs, Sausage, Fruit
  24. Tacos with Rice & Beans
  25. Monte Cristo Pizza (recipes post each Friday)
  26. Chicken Fajitas with the fixings
  27. Tur-Chicken Club Burger, Potato Salad for us (Boiled Potatoes for hubby)
  28. Buffalo Chicken Dump, Grilled, Potato Salad, with Cucumber and Tomato Salad
  29. Spaghetti and Salad
  30. Breakfast:  Blueberry Muffins, Eggs, Bacon, Fruit
Saturday lunches will be Tuna Salad Sandwiches and Sunday lunches will be Quesadillas or Bean Burritos.  I'm sharing a couple of Pizza Creations for Friday Night Pizza Nights.  I'm looking forward to trying these.  We have our Circuit Assembly on June 12 and 13 so we're going to be eating sandwiches and taking plenty of snacks for the kids.  I'm sure we'll stop and eat on the way home.  If not, I have some frozen meals in the freezer from previous OAMC days we can chow on.  Since the FNCCC is over and summer is here, I thought I'd go through some of Rachael Ray's burger recipes.  She claims to be the "burger queen" so we're going to try some of her burger creations through the summer months.  I'll share the recipe each Monday along with a review of whether we liked it or not.  Sounds like a plan to me!

Good for you Candi! You've worked hard and can now reap the benefits of your labor by simply reheating nad defrosting. Enjoy the summer time with your kids and being in the garden! Have a great month in June!
