OAMC: February Monthly Menu Plan

I am so thankful my Momma is going to be able to watch my children on Thursday so I can really focus on getting our meals ready for the month.  She's going to watch the kids in the afternoon and then I'll go and pick them up around 4 or 5:00 in the afternoon.  They love going to Nana & Pappy's house so it's a great break for me.  Plus I'm not feeling the greatest.  I think I caught the cold that everyone in our family has had. 

Last month when we had turkey for dinner, we had so much leftover turkey that I was able to put together two turkey pot pie fillings and freeze them in one gallon freezer food storage bags.  Also, I put together four (4) chicken dump meals last week.

On Thursday, I'm planning to make:
  • 36 chocolate chip granola bars (I cannot keep these in the house! Last time I made them, they lasted 2 days -- TWO DAYS!!! But I should count that as a compliment to how good they taste.)  
  • 24 sweet potato cranberry muffins (I'm going to use the pumpkin chocolate chip recipe and substitute sweet potato for pumpkin and chopped frozen cranberries for chocolate chips.)
  • 24 pumpkin chocolate chip muffins
  • 40 breakfast burritos for Kevin's breakfasts
  • 4 quarts of Mexican style chili beans
  • 4 batches of pizza dough
  • a batch of pork empanadas using up the leftover Citrus Cumin Pork Roast from last month, 
  • 2 Chicken Alfredo Florentine Casseroles (I'll probably use this recipe as a starting point and wing it as I go), 
  • 2 Baked Ziti Casseroles
  • a batch of chocolate chip cookie dough and freeze them in rounded scoops.  I've never done this before but have read it can be very successful.

I'm going to test some yeast roll dough to see if I can freeze the raw dough or bake them up and then freeze them.  Freshly baked yeast rolls are fabulous!!!  Jess at Cupcake Mommie's Menus offered this recipe for Yeast Rolls and I have to tell you they are FAB-U-LOUS!  So I'm going to experiment using her recipe.

Phew!  That's a lot of food and goodies.  Hope I can accomplish it all.  Since I love to cook and bake, it will be a ton of fun.  In fact, I must confess, I start planning my OAMC day nearly a month before the actual day begins.  I get so excited about it.  I wish I could go to everyone's house and prepare their meals for the month for them!

Here's how I'm planning out our meals for the month:

  1. Baked Ziti, steam veggies, rolls
  2. Turkey Pot Pie with rolls
  3. Eggs, grits and sausage
  4. Lentil & Ham Soup in the Crock Pot with Peasant Bread (new recipe to try)
  5. Taco Soup with leftover Citrus Cumin Pork Roast
  6. Lunch:  Bean Nachos; Supper:  Pepperoni Pizza
  7. Lunch:  BBQ Chicken Sandwiches;  Supper:  Russian Dump Chicken over rice and steam veggies
  8. Chicken Fried Rice with peas and carrots with egg rolls
  9. Chicken Alfredo Florentine Casserole with rolls and green beans
  10. Sausage Hash with grits
  11. Fish Chowder and rolls
  12. Tamale Pie
  13. Lunch:  Chicken Salad sandwiches, fruit and Quaker Quakes (Special Assembly Day);  Supper:  Apricot Dump Chicken over rice and veggies
  14. Lunch:  Pork Empanadas;  Supper:  Pepperoni Pizza
  15. Baked Ziti with steam veggies and rolls
  16. Turkey Pot Pie and rolls
  17. Eggs, grits and sausage
  18. Chicken and Rice Soup with crackers
  19. Traveling on the road: might bring Pizza with us
  20. Visiting family
  21. Traveling home
  22. Asian Dump Chicken with rice and steamed broccoli, peas & carrots
  23. Chicken Alfredo Florentine Casserole with rolls and green beans
  24. Sausage Hash & Grits
  25. Mediterranean Fish Stew with rolls or crackers
  26. Fiesta Enchiladas
  27. Lunch:  Pork Empanadas;  Supper:  BBQ Chicken Pizza (Tentative since we are running crawling jogging in our first 5K)
  28. Lunch:  Hot Ham & Cheese sandwiches:  Supper:  Rotisserie Chicken in the Crock Pot (I've also read you can roll tin foil into balls and perch the chicken on it to keep the chicken from steaming/boiling in it's juices -- but I can't remember if I read it on a blog or in a book.)
That pretty much sums it up for the month.  There might be a few changes throughout the month and I'll post them as we go along.

Hello, Found your website by Money Saving Mom. Very interesting plan. I am just nosing around looking for ideas from others. I noticed yo talked about rolls. I make our in the bread machine, then I under bake them (about 7 mins instead of 12-14). Once they cool I just pop them into a ziploc and toss them in the freezer. Then I just pull them out when needed. They only take about 7 mins to bake at 375. I love it!

I love the slow cooker rotisserie chicken and I do the foil balls in the bottom to keep it from boiling...sometimes I even put potatoes wrapped in foil in the bottom instead and we have chicken and baked potatoes all in one pot!

Great idea Cas, I think I might try that. Might as well put the heat to some good use :)
