Ginger Cinnamon Pear Preserves

These are so yummy but I really should call them Pear Honey because that's what it tastes like! My father-in-law gave us some more pears this past weekend and I made Pear Applesauce. I combined the rest of the apples we picked in Ellijay with the pears he gave us. They are so much easier to make than the preserves. Plus we eat the applesauce more than the preserves. It might be because the applesauce is just a tad more healthier with only about 1/2 cup sugar for the entire dutch oven! Here is the recipe for the preserves:

Ginger Cinnamon Pear Preserves
  • 16 cups pears, peeled, cored and sliced thin
  • 13 cups sugar
  • 1 Tbsp ground cinnamon
  • juice of 1 lime
  • 1 Tbsp finely chopped crystallized ginger
Combine all ingredients in a large dutch oven and stir well. Let it sit overnight. Simmer on medium heat until the temperature reaches 220F. Remove from heat and pour into sterilized jars. Process in water bath for 15-20 minutes depending on the size of your jars. Enjoy!
