Easy Buffalo Chicken Pizza

Remember that rotisserie chicken that wasn't thawed out enough yesterday? Well, it is thawed today and I shredded it up and put it in a storage container. For this recipe you'll need 2 cups cooked chicken.














Easy Buffalo Chicken Pizza

  • 2 cups chicken, cooked and coarsely chopped
  • 1/4 cup shredded carrot
  • 1/4 cup diced celery
  • 1/4 cup sour cream
  • 2 Tbsp Buffalo Style sauce (we have Texas Pete on hand currently)
  • salt and pepper
  • 4 oz shredded Mozzarella cheese
  • 2 oz shredded Swiss cheese
  • 1 refrigerated pizza dough (we had pillsbury in the fridge)
  • Sprinkle of cornmeal
Sprinkle your baking sheet evenly with cornmeal. Unroll the pizza dough and carefully stretch into rectangle following the package instructions onto baking sheet, set aside. In mixing bowl, add chicken, carrot and celery. In separate small mixing bowl, combine sour cream and Buffalo sauce. Pour sour cream mixture over chicken mixture and combine well. Pour chicken mixture over prepared pizza dough, spreading to within 1" of all edges. Sprinkle cheeses evenly over chicken mixture. Season with salt and pepper and bake at 400 degrees F for 14-16 minutes.

*** UPDATE *** I substituted 1/4 cup Light Ranch dressing for the sour cream tonight and it tastes yummy-licious! - 6/8/09

Yummy! I'll have to make that! I've got lots of chicken in the freezer I need to start using! How come I can only see one post at a time?
