RECIPE: Savory Sweet Potato Chips

I love sweet potatoes: mashed with bourbon and butter; baked with cinnamon and brown sugar; in a pie of any kind; roasted in the oven with olive oil and rosemary.

Today I tried some sweet potato chips.

I peeled the sweet potatoes and then sliced them very thin, as thin as I could without cutting myself (AGAIN). If you have a mandoline, use it to easily slice the sweet potatoes and it will also keep them uniform so they have the same cooking time.

Heat a couple of inches of vegetable oil in a heavy bottom pot or if you have a deep fryer, you can definitely use it. Try to keep the oil around 350 degrees F. Drop a few slices of sweet potatoes into the hot oil and fry them until they are brown.

Using tongs or other utensil turn the sweet potato slices over so both sides get brown. The thinner you cut them, the crispier they will be. Remove them from the oil to a paper towel lined rack or plate and immediately sprinkle them with a mixture of cumin and salt.

Not only are these super yummy, but they are also more healthy than a regular potato chip! Sweet potatoes are high in beta-carotene which converts into Vitamin A. Sweet potatoes are also a great source of fiber. So this should make you feel good about them being fried :)
