Easy Ice Cream Sandwiches
The other day I ran across a recipe for an easy ice cream sandwich. It involved graham crackers and cool whip! Publix had their graham crackers on sale the other day and I got a box of chocolate and a box of cinnamon. This week at Publix they have their cool whip on sale. They are offering chocolate and french vanilla flavors. So guess what?! I decided to try those easy ice cream sandwiches and they are delicious! Here's how you do it:

Southern Style Biscuits
When I think of biscuits, I think of the ones my Granny used to make. They were fluffy and smelled delicious! She made them with buttermilk and hand pinched every one of them. They were beautiful every time she made them. Since she had been making biscuits since she was about 10 years old, she never needed a recipe to follow. Unfortunately for me, I have NEVER been able to make a nice fluffy biscuit. I usually resort to buying the frozen ones at the grocery store and baking them off, seeing as how they taste just as good as homemade, and definitely better than the hockey pucks I end up making...until now.
I looked up a recipe on cooks.com and they ended up hard as bricks. So I read the comments about the biscuits and realized I needed to add more milk and handle them less. They should be sticky like canned biscuits.

Southern Style Biscuits
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 5 tablespoons chilled butter flavored Crisco
- 1 cup buttermilk
- Preheat the oven to 425 degrees F. In food processor, add flour, baking powder, salt and baking soda. Pulse it to combine and fluff up the flour. Add Crisco and pulse until it looks like wet cornmeal (about 6-8) pulses.
- Add the buttermilk and pulse 5-7 times, dough will still be crumbly and very sticky.
- Pour out dough and crumbs onto a well floured surface. Gather edges and using just the tips of your fingers, push to the middle and turn. Do this a few times (maybe 5 or 6 times) adding flour to the sticky parts.
- Pat dough to about 3/4" to 1" thickness. I used a glass dipped in flour to cut out the biscuits but you can use a biscuit cutter or even cut them into squares for less waste (I saw a restaurant on food network that makes square biscuits). Place them on a lightly greased cookie sheet. Continue lightly gathering the dough and cutting out more biscuits.
- Bake them until golden brown 12-15 minutes. Brush the tops with butter and serve hot.
- Freeze leftovers (if you have any) and reheat in microwave on defrost setting.

Emergency Kits
Kevin was telling me about this book called One Second After. It's about an electromagnetic pulse weapon that disables everything that relies on computers or electronics. Of course, he was telling me this on our trip back home from visiting Austin and asked me what I'd do if something like that happened to us while we were traveling. The car would not work anymore because of its computer. He proceeds to tell me that it would probably take us 2 weeks to get home (walking). When I suggested a horse, he said who would let us keep a horse when there would be others needing some form of transportation. What would keep them from taking it from us, using whatever means they deemed necessary. So after talking about this for about an hour, I decided we really needed to gather emergency supplies to keep stored in the garage, and pray that we are home or near home when something happens. The branch has encouraged us to have a kit in our homes in case of a disaster. After the friends in Kentucky were hit by the ice storm and were without power and water for days, I thought I needed to get some water. Then I saw an episode of The Unit where someone tampered with the water supply and pumped chlorine gas through the water pipes and killed people. I thought I needed to get some duct tape. Then Kevin was telling me about that book and I thought, I really need to get something together. So last night after the meeting, I searched the web for a list of practical items to keep in a kit. I found it on the ready.gov site. It's a very practical list of items we all can get at our local grocery store and Wal-Mart.
Our CVS has plastic storage containers on clearance 50% off so check out your local stores to see what's on sale. Keep everything in the totes, so in case of an emergency you can grab the whole thing in a hurry. That may mean you will need to rotate canned food items that might expire.

Recommended Items to Include in a Basic Emergency Supply Kit:
- Water, one gallon of water per person per day for at least three days, for drinking and sanitation
- Food, at least a three-day supply of non-perishable food, manual can-opener
- Battery-powered or hand crank radio and a NOAA Weather Radio with tone alert and extra batteries for both
- Flashlight and extra batteries
- First aid kit
- Whistle to signal for help
- Dust mask, to help filter contaminated air and plastic sheeting and duct tape to shelter-in-place
- Moist towelettes, garbage bags and plastic ties for personal sanitation
- Wrench or pliers to turn off utilities
- Can opener for food (if kit contains canned food)
- Local maps
- Prescription medications and glasses
- Infant formula and diapers
- Pet food and extra water for your pet
- Important family documents such as copies of insurance policies, identification and bank account records in a waterproof, portable container
- Cash or traveler's checks and change
- Emergency reference material such as a first aid book or information from www.ready.gov
- Sleeping bag or warm blanket for each person. Consider additional bedding if you live in a cold-weather climate.
- Complete change of clothing including a long sleeved shirt, long pants and sturdy shoes. Consider additional clothing if you live in a cold-weather climate.
- Household chlorine bleach and medicine dropper – When diluted nine parts water to one part bleach, bleach can be used as a disinfectant. Or in an emergency, you can use it to treat water by using 16 drops of regular household liquid bleach per gallon of water. Do not use scented, color safe or bleaches with added cleaners.
- Fire Extinguisher
- Matches in a waterproof container
- Feminine supplies and personal hygiene items
- Mess kits, paper cups, plates and plastic utensils, paper towels
