RECIPE: Easy Peanut Butter Cookies

This has got to be the easiest peanut butter cookie recipe I've ever tried.  Haylei and I made these with her cousins Melissa and Dominick.  And they were so good!


Easy Peanut Butter Cookies
1 cup sugar
1 cup peanut butter (creamy or crunchy)
1 egg


In a mixing bowl, combine sugar, peanut butter and egg.  (When I took these pictures, we used crunchy peanut butter).  Roll the batter into 1" balls and roll into a small bowl of sugar.  Place them on a cookie sheet about 2" apart.  Press a criss-cross design into the cookies with a fork.  Bake at 350 degrees F for 13-15 minutes.  Remove to cooling rack and allow to cool.

This is our all time favorite peanut butter cookie recipe! Great for people who have wheat or gluten sensitivity too, since there are no grains. I also find I can cut the sugar a bit (about 2/3 cup works fine) and don't notice much difference.
