Can you tell we have zucchini coming out of our ears? Growing up, this was something my Momma made us alot. It was so good!
Zucchini Nut Bread
3 eggs
2 cup sugar
3/4 cup applesauce
1/2 cup vegetable oil or melted butter
1 Tablespoon vanilla extract
3 cups grated zucchini, liquid drained
3 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup walnuts or pecans, chopped (tossed with 1 Tablespoon flour)
In a large bowl beat eggs, sugar, applesauce, oil and vanilla. Add zucchini and stir well. In a separate bowl, combine flour, soda, cinnamon, powder and salt. Fold in the dry ingredients into the wet and then add nuts. Pour into 2 greased loaf pans. Bake at 350 degrees F for 1 hour or until the bread tests done with a toothpick. Cool on rack for 10 minutes. Remove from pans and cool completely. Wrap and freeze one for later or for a friend and serve the other.
Enjoy!

Love sneaking in veggies:-)
I cannot wait until the zucchini in my garden is grown. I have a long list of things I want to make with it. One of which is this. Thanks for posting.
Looks good.... I wonder if my husband and daughter would eat this? Hmmm...
Just don't be an idiot like me and forget the baking powder and/or soda in your breads/muffins. I did that this morning when I baked blueberry muffins and WHAT A DISASTER! sigh! So of course I had to write a post about my mishap and include some photos of my mushy-vomit muffins. Check it out if you get a chance!
p.s. - do you have any recipes you've tried to make your own hot pockets or quiches for the kids? I'm looking for ideas for "on-the-go" meals for an upcoming recipe club meeting and I was thinking of trying to make calzones, hot pockets or some other dish that has all the meat/food inside -- perfect for a car ride and busy lifestyle!
I just wanted you to know I passed the Beautiful Blogger Award to you! Here's a link:
