First week of July already! It's going to be a fun week. We're planning a little camping trip. I hope the weather will be good, since we're going to be in a tent.
I'm not going to be doing my typical OAMC this month. Instead, I'm going to be doing batch cooking. Which means when I make something, I'll make extra of that recipe and freeze it for later on in the month.
Since all my children will be here this month, I'm going to make an effort to keep them busy. I love how Jessica at Life as Mom came up with her very own Summer Camp for her children. She outlined activities, books, field trips, movies and even meal ideas for some summer fun. Since we are planning our camping trip, I'm going to tailor our week after her Great Outdoors week.

We're going to keep it pretty simple this week:
Breakfast: Oatmeal with dried fruit; Cinnamon Rolls with fresh fruit; Cereal with bananas
Lunches: Peanut Butter and Honey Sandwiches with applesauce; Grilled Cheese & Tomato Sandwiches with peaches; Summer Veggie Pasta Salad with grapes
Weekly Snacks: Popcorn; Peanut Butter Crackers; Tomato slices, Carrot & Celery Sticks with Ranch Dressing; Fruit Smoothies with Yogurt
Monday: Thai Pork Wraps (new recipe for us) (Library, hike around the lake and playground)
Tuesday: Buffalo Chicken Pasta (new recipe for us), Stuffed Zucchini (FREE Movie day at the Regal Movies - our choices are Doogal or Planet 51, I'm thinking the kids will choose Planet 51 and we have our meeting tonight)
Wednesday: Breakfast: Pancakes, Bacon and Eggs (my stepson's favorite) (Grocery shopping and packing for trip)
Thursday: Camping Trip, Night 1: Pizza Pockets (You didn't think I'd give up on my Friday Night Pizza Night just because we're camping out! Well, we're going to be eating pizza on Thursday night rather than Friday. Since my stepson and I will be unloading and setting up the tent, I figured the last thing I'm going to want to do is make supper. We'll be doing good to get a fire going! I'm going to bake the pizza pockets on Wednesday and wrap them in tin foil after they've cooled. We're going to use my Pizza Dough II and stuff them with Pepperoni and Mozzarella. Then we can grill them on the fire and eat :), Fruit
Friday: Camping Trip, Breakfast: Eggs, Bacon, Fruit; Lunch: PB&J Sandwiches, Chips and Fruit, Night 2: Ribeye Steaks, Baked Potato, Grilled Greek Zucchini & Tomatoes, S'mores
Saturday: Camping Trip, Breakfast: Bacon Hash with Scrambled Eggs, Fruit; Lunch: PB&J Sandwiches, Chips & Fruit; Night 3: Grilled Chicken, Hot Dogs, Baked Beans, Grilled Corn on the Cob, Chips, Roasted Marshmallows
So that's our week and it's jammed packed. We like it that way!

You are having a busy week! Can't wait to hear how those new recipes turn out. Have fun camping, we may be camping to, we have to see how everyones schedule is.
