Meal Plan Monday 1/31/11

I'll share the February meal plan on Tuesday.  I'm trying to plan meals from things in the freezer.  

Last week we ate some yummy things:
Baked Salmon Cakes.  YUM!  I made extra of the salmon cakes and froze them.  We were supposed to eat Turkey Croquettes, but the turkey was all gone.  We absolutely love this salmon recipe.  It's delicious!

Sausage and Potatoes Italiano.  I used ground turkey and flavored it with ground fennel, red pepper flakes, black pepper, rubbed sage, garlic powder, onion powder and Italian seasoning.  This was really good.  It gave me horrible heartburn, but it was very tasty!  I didn't get a picture of it, but I cooked it in the crock pot and it turned out really well.  I didn't use the green onions as directed by the recipe, because we don't like raw onions

So here's a peek at what we'll be eating this week:

Monday:  Soup Beans and Cornbread (mashing leftover beans and freezing) with Chow-Chow

Tuesday:  Stacy's Southwestern Rice (adding extra beans and leaving out the chicken)

Wednesday:  Scrambled Eggs, Turkey Bacon and oranges

Thursday:  Leftovers (or using frozen mashed beans for Chalupas)

Friday:  Thin Crust Pizza (using deli Salami in the freezer)

Saturday:  Lunch: Tuna Salad Sandwiches, Veggie Chips, Carrots and Creamy Ranch Dip; Supper:  New Meal:  Potatoes and Chicken Fiesta* (adding pre-cooked chicken breast)

Sunday:  Super Bowl:  Granny's Chili (sharing recipe on Sissy's blog), Piglets in Blankets, Greek Garden Spread, Asian Chicken Wings (sharing recipe on Monday), Veggie Platter and Creamy Ranch Dip and Fudge Brownies* (Shhhh-I'm going to "guinea pig" everyone to see if they can figure out the difference.)

We love salmon patties here, we call them crabby patties. :) Looks like a great menu for the week.
