My favorite is Chicken Parm. I take boneless chicken thighs, dredge them in flour seasoned with Italian seasoning and salt, dip in egg, and then dip in panko and pan fry. I serve with pasta and spaghetti sauce. I add extra sauce to dip the chicken in as I eat it, that way it stays crispy.

I love Chicken Parmesan. Just coat chicken breasts in bread crumbs, cover with tomato sauce, and then top with parmesan and mozzerella cheeses. Yum!

Spaghetti! I like to use a store bought sauce (usually ragu), ground beef, fresh onion and green pepper and usually canned mushrooms. Sautee the onion and green pepper with the beef, add in mushrooms near the end and pour sauce in and cook until heated through. I use whole grain pasta, usually penne or rotini. I usually make parmesan garlic toast to go with it, buttered bread sprinkled with garlic powder and parmesan.

Love Spinach Lasagna, heat your jar sauce in a pan,( can add italian herbs, fresh garlic etc. to make it more homemade, if like) meantime boil lasagna noodles till almost done. Mix thawed & drained box of spinach with cottage cheese, set aside. Spread some sauce in the bottom of casserole pan, begin layering noodles, sauce, shredded mozzerella, asiago,(or anytime of Italian cheese) & cottage cheese & spinach mixture repeat this 2 more times ending with cheese for top. Bake at 350 degrees for approx. 45 mins. or until golden brown. enjoy !! :)

My fave Italian meal is Lasagna, my MIL's recipe - simple but delicious - sauce, cheese, hard boiled eggs, noodles, sauteed ground beef.

The easiest meal is using noodles, jar of sauce and frozen meatballs. May not be healthy but it is a quick meal.
