Meal Plan Monday 2/14/11

Last week I attempted to make a new soup, the Beef, Potato and Quinoa soup.  Well, I left it on the stove to cook while I ran out to the store and left my husband in charge.  Apparently, he decided it was time to turn it off when he smelled a horrible burnt odor coming from the pot.  I should've known better.  Oh well, I finally got the charred food off the bottom of the pot after it soaked for 2 days in dishwashing powders.  

We also ate Italian Chicken and Brown Rice.  It was really good.  My husband didn't care for it, he thought it had too many tomatoes in it.  I gave the rest of it to my Momma and they loved it. 

Breakfasts:  Fiesta Breakfast Burritos (scrambled egg and baked turkey bacon wrapped in a tortilla, topped with cheese, salsa, sour cream); Cereal with Banana and Almond milk; hard-boiled egg on toast, yogurt and fruit

Lunches:  Baked Sweet Potato Black Bean Hash (cube sweet potatoes, bake in oven until soft; combine with black beans) Cucumber Salad and Pear; Ham Sandwiches with Mustard on Low Fat Bread, carrots with Creamy Ranch Dip; Black Bean Nachos with lowfat cheese, salsa and plain nonfat yogurt; Tuna and White Beans Saute

Snacks:  Greek yogurt, raisins and sunflower seeds; Peanut Butter with Apple slices;  Chocolate Banana Smoothie; Pumpkin Spice GranolaCranberry Almond Granola Bar; Chamomile Tea

This week we'll be trying two new recipes (*) and eating two of our favorites.

Monday:  Crock Pot Lasagna (using pre-cooked ground turkey) with Peasant Bread (made this Sunday) and Steamed Broccoli and Green Beans

Tuesday:  Ground Turkey Barley Soup (using pre-cooked ground turkey)*, leftover Peasant Bread

Wednesday:  Scrambled Eggs, Turkey Bacon, Oranges and Greek Yogurt

Thursday:  Leftovers

Friday:  Thin Crust Pepperoni Pizza with Peppers and Salad

Saturday:  Creamy Salsa Potatoes (using pre-cooked ground turkey)*, Corn and Tomato Salad, green beans

Sunday:  Sweet and Spicy Short Rib Tacos (wrapped in warmed corn tortillas with cilantro sour cream), Mexican Rice and Beans (using pre-cooked brown rice and black beans in the freezer for faster prep) - I just hope I can make it through Sunday for this meal...it's my FAVORITE!!!

Last week I cooked up the ground turkey, chicken breasts, black beans and brown rice.  I have them all in the freezer to make for fast work this week.  I'll need to do a little batch cooking this week:
-Pumpkin Spice Granola
-Cranberry Almond No Bake Granola Bars
-Boil some eggs
