I barely had time to sleep. I'm looking forward to getting back into a simple routine. It makes me happy.
Breakfasts: Toast with butter and cream cheese with hard boiled egg and fruit; Fiesta Scrambled egg and cheese wrap with fruit; Peanut Butter Banana Smoothie with Toast
Lunches: Bean Nachos with apple; Turkey and Avocado Sandwich with pear
Snacks: Turkey wrapped string cheese and apple; Yogurt with fruit and chopped nuts; Cheese stick with apple and peanut butter
Week before last, I shared how I freeze precooked rice. This week, I'm going to be using some of that rice for a couple of meals.
Monday: Slow Cooker Honey Garlic Chicken* with brown rice, sweet peas and green beans
Tuesday: Lasagna Soup with Green salad (my hubby's favorite soup)
Wednesday: Egg White Omelet filled with veggies and low fat cheese, fruit, toast
Thursday: Stacy's Southwestern Chicken and Rice (using frozen rice, chicken and black beans)
Friday: yard sale - Thin Crust Tortilla Pizza with Spinach Salad
Saturday: yard sale and kid's party - Dinner out
Dessert: Orange Creme Loaf (sharing recipe on Monday)
