Meal Plan Monday: 5/2/11


I need to make some freezer meals, but I'm not feeling too great.  I'll probably push myself on Tuesday to get some made.  I found this yummy Pizza Roll Up Burrito that I think my husband will LOVE.  I also have some Black Bean, Chicken and Rice soup in the freezer, that I'll thaw to make some Black Bean & Chicken Enchiladas.   I also need to make some muffins.  I made some Banana Oat Muffins last week and they were so easy and delicious, I'm going to make them again.  They are only 84 calories each!

This week we'll be eating:

Monday:  Crock Pot Salsa Chicken (minus the cream of chicken soup) over brown rice and Sante Fe Salad with Chili Lime Vinaigrette

Tuesday:  Chicken Rollatini* with salad and green beans

Wednesday:  Huevos Rancheros*, turkey bacon

Thursday:  Fiesta Rice and Beans Salad (I'm going to blend the sour cream and salsa together to make a "dressing" and see how that turns out)

Friday:  Taco Night with Mexican Rice and Beans

Saturday: We're hosting our cousins for lunch.  He will be giving the talk at our meeting Saturday morning - not sure what we'll be eating for lunch but possibly grilling out if the weather is good.  Supper:  Pizza Night with salad

Sunday: Lunch:  Sandwiches and soup;  Supper:  Granny's Oven Roasted Turkey, mashed sweet potatoes, Southern Cornbread Dressing,  green beans, cranberry (saving leftover turkey for some freezer meals)
