Over the weekend we picked apples in Ellijay. It was a BEAUTIFUL weekend! So perfect! The weather was just right and the kids were pretty good too. Now I have 1/2 peck of apples to turn into applesauce and 1/4 peck to turn into apple pie filling. We walked down to the base of Amicalola Falls and walked back up...850 steps overall...my legs were like jello! But it was so pretty. I'll share the pictures later this week. I'm also going to try a new recipe for lunches this week...Creamy Carrot Soup. I actually made this at work last week and it was a huge hit, but I'm going to try to make it with coconut milk to cut down on the fat of heavy whipping cream.
This week we're eating:
Tuesday: chicken Chicken Tikka Masala (need to remember to get garam masala) with couscous and Honey Ginger Carrots
Wednesday: breakfast (egg) Scrambled Eggs, Bacon, Toast and Oranges or Cereal
Friday: pizza with Salad
Saturday: Sandwiches or Cereal
Sunday: ground beef North African Meatballs over brown rice with steamed broccoli and green beans

I used to love going apple picking. That carrot soup sounds interesting, looking forward to the recipe.
I want to go apple picking sooo badly! I don't think we have any public orchards around here.
