Meal Plan Monday: 9/19/11



Monday:  1983 Bean Nachos with Guacamole Salad and Salsa Verde

Tuesday: Buffalo Chicken Sandwiches, Baked Chips, Apples and Cole Slaw (making extra chicken to use on Thursday)

Wednesday: Breakfast for dinner - Eggs, Toast, Fruit and Bacon

Thursday: Buffalo Chicken Lasagna (sub cottage cheese for ricotta) Salad with Apples and Bleu Cheese, Garlic Bread (using leftover chicken from Tuesday)

Friday:  Pepperoni Pizza Quesadillas - something I thought up while driving home last Friday.  Just like our Thin Crust Pizzas only folded over, Balsamic Dressed Salad

Saturday:  Thinking it's cookout weather.  Low Country Boil.  Shrimp and sausage on sale at Kroger this week! 

Sunday:  Meatball Curry,*Couscous, Salad with Mango Dressing

This might change as we go through the week.  For example last week, I forgot to lay out the chicken for the Tikka Masala and we never did get around to eating that yet.  But I have everything on hand, so you'll probably see it on the menu plan again soon.
