Menu Planning Monday 6/15/09

We had a lot of changes to last week's menu plan. I bought a huge pork roast at Kroger on sale a few weeks ago. I think it's over 8 lbs. So I intend on stretching this all week. This is what's on the books:

Monday: Pork Pot Roast, Crock Pot, roasted rosemary potatoes, carrots & broccoli

Tuesday: Leftover Pork Roast, shredded for fast and easy pork tacos with black beans & rice

Wednesday: Leftover Pork Roast, shredded for BBQ pork sandwiches, mac & cheese, tomatoe & cucumber salad

Thursday: Leftover Pork Roast, shredded for Brenda's Taco Soup (I'll sub shredded pork for ground beef)

Friday: Pizza Night with salad

Saturday: attending a gathering, doing party foods

Sunday: dinner at friend's
