Meal Planning Monday 11/16/09




It might seem overwhelming to prepare your menu for the week to come. If your life is as crazy and hectic as mine, I assure you having a menu plan in place will put your mind at ease. It's really one less thing to worry about. I love menu planning and since we started stockpiling, we are able to create some interesting meals. I'll be utilitizing a couple of meals from our freezer I made in the last week or so.

Weekly Breakfasts: cereal, muffins, granola bars, bananas
Weekly Lunches: macaroni cheese with peas, hot dogs, grilled cheese sandwiches, soup, applesauce

Monday: Chili Burritos (leftover vegetarian chili combined with leftover rice and leftover shredded pork roast, stuffed in flour tortillas with shredded cheese) served with salsa & sour cream; rice and beans

Tuesday: Chicken & Rice Casserole

Wednesday: Breakfast for Supper: Scrambled Eggs, Twice Baked Potatoes, Fruit

Thursday: Chicken and Rice Soup (from the freezer)

Friday: Pizza night - pineapple and BBQ chicken style, using this recipe for the crust tweaking it by adding 1/2 teaspoon Italian Seasoning, and using 3/4 cup Whole Wheat Flour and 1 cup All Purpose Flour to increase the fiber and healthy factor for our family

Saturday: Dinner with friends - taking Crock Pot Corn Pudding (I'll post the recipe later in the week)

Sunday: Tuna fish sandwiches and oven fries for lunch and leftovers for dinner
