RECIPE: Citrus Garlic Roasted Chicken

This is definitely a Pantry meal.  I had originally planned to make Lemon Pepper Chicken but didn't have any lemons on hand.  I found an orange, lime and a grapefruit instead.  So I concocted this recipe and it turned out pretty tasty.  When we make this again, I think I'll leave out the grapefruit as it brought a bitter flavor to the sauce in the pan.  Although I tasted the bitterness, it didn't prevent everyone from wolfing down their suppers!

Here's how I did it:

Citrus Garlic Chicken
Zest and juice of 1 orange
Zest and juice of 1 lime
Zest and juice of 1 grapefruit (totally optional)
1 stick butter, melted
1/4 cup of honey
1/2 teaspoon ground black pepper
1 teaspoon garlic salt
3 chicken breasts (because that's what comes in a package at my store)



In a mixing bowl, combine the first 7 ingredients and stir well.  Arrange the chicken breast with bone up, meaty side down, in a baking dish.  Carefully pour the marinade over the chicken breasts. 



Bake at 375 for one hour.  About 30 minutes into the baking time, baste the chicken with the sauce in the pan.  Return to the oven and continue baking.  Remove from oven and baste a few more times.  Allow to rest for 10 minutes.  Slice the chicken from the bone and spoon a little of the marinade/sauce over the slices.

That looks good too. You'll have to link that to my RED-Meatless Monday's. I've never roasted a whole chicken before but that recipe looks pretty easy. :)

Looks tasty! I love how you use several different citrus fruits to give it that extra "umph" of flavor!
