Can you believe this is the end of the March??? I am still in shock...not sure where the month went...
So we're finishing up our monthly meal plan using some leftover pork roast and trying a couple of new recipes...
Weekly lunches: PB&J sandwiches, fruit; Macaroni & Cheese, fruit
Weekly snacks: smoothies, cheddar sticks, apple slices, popcorn
Weekly breakfasts: cereal, bananas, raisin bran muffins, apple cinnamon oatmeal
Monday: Shredded Pork Tacos (using leftover Citrus Cumin Pork Roast), Leftover Red Beans & Rice (thawing this and adding some tomato paste, ground cumin and chili powder to make them taste more Tex-Mex than Louisianan)
Tuesday: Kevin took the day off work so he won't be late for the Memorial. This is the night of the Memorial of Christ's Sacrifice so we'll be eating light so we're alert for this very special annual commemoration. I think we'll have breakfast for supper tonight since it's fast and easy. We're going to try a new Paula Deen recipe for Baked French Toast. This is also the recipe I'll be doing for FNCCC. I'll post the results for Wednesday.
Wednesday: Stacy's Southwestern Chicken & Rice
Thursday: Ultimate Black Bean Nachos
Friday: Black & White Pizza - this is a new recipe we're trying so I'll let you know if it's good!
I'll be posting a new monthly meal plan for the month of April on Thursday so stay tuned. We're also going to be doing OAMC (once-a-month-cooking) so stay tuned for all the fun!
