OAMC: Plan for May 2010

Earlier this week I shared some recipes for leftover turkey.

After baking our bird and removing the meat, I've ended up with 4 cups dark meat and 8 cups white meat.

I think we've narrowed it down to the following recipes for the turkey:

Turkey Enchiladas (x2)
Turkey Shepherd's Pie (x2)
Turkey Tetrazzini (x4) - this is a really yummy recipe and we love it
BBQ Turkey (using dark meat) (x2)

I'll be cooking chicken breasts in the crock pot and use cubed chicken for these meal kits:
Southwestern Chicken & Rice (x2)
Chicken Fried Rice (x2)

I'm also planning to bake up a few goodies too:

Strawberry Chocolate Chip Muffins  I'll be using frozen strawberries from our picking adventure

Money Saving Mom's Waffles  Her waffles are really, really good and they freeze great.  I usually thaw them on the counter and then reheat in the microwave for a few seconds for a softer waffle.  But if you like crispy waffles, reheat them in the oven at 350 degrees F for a few minutes.  We've had them both ways and love them!)

OAMM Pumpkin French Toast Sticks  These are so good and so easy! I've made them the last 2 months and the kids love them -- and me too -- I usually serve them reheated in the microwave for just a few seconds then sprinkle them with powdered sugar or drizzle with honey.  And you don't have to use pumpkin, but that's what I have on hand so that's what we're using.  I'll be using this recipe for homemade bread to make the french toast.)

Giant Breakfast Cookies (this is the first time I'm trying these, but everything I've ever tried of hers turns out delicious!)

Frozen Chocolate Chip Cookie Dough

I'll also need to prepare some dried black beans and par-cooked rice for some meal kits.

I learned last month that I must have a time-line in place so I stay on track and get as much accomplished as I can.  So here goes:

day before:
  • cook chicken in the crock pot, cube, bag and freeze in 2 cups servings
  • rinse and soak black beans overnight
  • rinse and par cook rice for meal kits - separate into 2 cup servings, bag & freeze
  • chop onion, celery and carrots for meals tomorrow; wash potatoes 
next morning:
  • rinse beans and cook them in the crock pot
  • mix up waffle mix and get them going throughout the day
  • mix up muffins and get them into the oven
  • boil noodles for Tetrazzini
  • boil potatoes for Shepherd's Pie
  • start Tetrazzini sauce - assemble meal, bag and freeze, attach crushed crackers to bags
  • remove muffins from oven
  • mix up Giant Breakfast Cookies and bake them off
  • start Shepherd's Pie - prepare (2) 8x8 pans with plastic wrap and tin foil - pan, wrap and freeze
  • start BBQ Turkey on stove top - bag and freeze
  • mix up Cookie Dough - scoop and flash freeze
  • remove Breakfast Cookies from oven
  • mix up French Toast Sticks and get them into the oven - (completed Wednesday)
  • start Turkey Enchiladas - prepare (2) 8x8 pans with plastic wrap and tin foil - pan, wrap and freeze
  • pluck the cookie dough from pan, then bag & freeze
  • cool and rinse black beans from crock pot on sheet pan, bag into 2 cup portions, freeze
  • work on granola bars...
  • start cheese sauce for macaroni & cheese lunches - bag into 1 cup portions and freeze
  • start Ritzy Chicken Nuggets for the kids' lunches & Chicken Parm pizza
  • start Creamy Tomato Soup for the kids' lunches - bag into 2 cup portions and freeze
  • freeze any leftover bags of rice for other meals later on
We'll see how much I get done, but it's important for me to have a list and a plan :)

Oh My what a menu plan sounds delicious. And what a busy 1 1/2 days, I surely hope you have a babysitter during those day I can't imagine having the kids and doing all that cooking, yikes!

You're awesome! I've never done that much cooking at one time! I've done three or four meals in one day for the week but not that much. I love tettrazini recipes. I've made it with ham before and it comes out just as good as turkey. Good luck!

I wish I had a baby sitter. My momma sometimes watches them but not this time. My husband will be here until 11:30 in the morning and then it's just all me. I manage to finish alot when I put on their favorite movies and pop them some popcorn. That's my go-to method for getting anything done, that includes cleaning and cooking :)

I was wondering what your measurements were for the pumpkin french toast sticks. The original recipe seemed strange. Thanks.

Hi Laura, I follow her recipe pretty much as is, but I use half a can of pumpkin and freeze the other half for other recipes or next month for more french toast sticks.
