Menu Plan Monday 6/14/10


Weekly breakfasts:  cereal with bananas, strawberry oatmeal, toast and jelly

Weekly lunches:  ham & cheese sandwiches, Chicken Salad with crackers, Summer Vegetable Pasta Salad (recipe to post on Monday), fruit, applesauce

Weekly snacks:  popcorn, Blackberry Banana Smoothies, carrots and ranch dressing, "ants on a log" (celery with peanut butter and raisins), Zucchini Bread (recipe to post on Thursday)

Monday:  Grilled Hawaiian Luau Chicken Breasts, Pineapple Rice (minus the green onions) and Steamed Broccoli (chicken breasts are in the freezer with the marinade in the bag, thawing them in the refrigerator over the weekend so they'll be ready for the grill)

Tuesday: Spaghetti with Salad or Sauteed Zucchini (ground beef has already been cooked and in the freezer, need to thaw and boil noodles, then toss a salad)

Wednesday: Breakfast:  Blueberry Muffins, Eggs, Bacon, Fruit (muffins have already been baked along with the bacon, just need to thaw and reheat in the microwave, then scramble some eggs)

Thursday: Tacos with Rice & Beans (taco meat already done and in the freezer, just need to thaw and reheat rice and beans from the freezer too, then chop lettuce and grate cheese)

Friday: Cuban Pizza (recipe to post Friday afternoon)

Saturday: Rotisserie Chicken (Crock Pot) Mashed Potatoes and Green Beans or Sauteed Squash (saving some chicken for 6/21/10)

Sunday: Turkey and Black Bean Burrito Burger with Oven Cheese Fries and Salad (I'll share our version of this burger on Monday with our verdict)

    My hubby isn't a big fan of rice anyway, so more for me! lol
