REVIEW & GIVEAWAY: Pumpkin Walnut Coffee "Cake"

My Blog Spark contacted me about reviewing the new Pillsbury Grand Mini Frozen Biscuits.  I love Pillsbury frozen biscuits, they rise up beautifully and taste just like homemade - even better sometimes!

Part of this review was to create a recipe using the frozen biscuits.  My Blog Spark and Pillsbury provided me with a $15 gift card and a coupon for a free bag of frozen biscuits.  I purchased what I needed to make the recipe using the gift card.  The store I shopped at did not have the mini biscuits so I bought the regular size Grands biscuits.

This is what I came up with:

This is reminiscent of a "monkey bread".  Here's what you do:

Pumpkin Walnut Coffee "Cake"
1 bag frozen Pillsbury Grands Biscuits
1 small box pumpkin pudding (it's seasonal so stockpile it)
1 tsp pumpkin pie spice (or 1/2 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp allspice, 1/8 tsp nutmeg)
1 cup chopped walnuts or pecans
1/2 cup butter melted 

Spray a Bundt pan with non-stick cooking spray and stand the biscuits on their side and around the pan.
Sprinkle a small package of pumpkin spice pudding mix and pumpkin pie spice over the biscuits.
Sprinkle the chopped walnuts over the pudding mix.
Pour melted butter over the biscuits.
Bake at 350 degrees F for 40-45 minutes until biscuits are puffed and golden brown.
Invert onto a serving plate and enjoy with your morning coffee or tea.

I would have liked for this to be a little more "gooey" and more pumpkin-y.  In the end, the biscuits were perfectly flaky and moist and it turned out more like a crumble than a gooey monkey bread.  Oh well, maybe next time I'll mix the pudding mix with the melted butter and pour it down over the frozen biscuits.

I love that I am seeing so many recipes with pumpkin in them! These look good. It would be nice to have some frozen biscuits on hand for those dinners where you need just a little extra. Thanks for the contest!

My husband had gotten in the bad habit of visiting Martins on a regular basis for a morning biscuit. Last month I started baking up some frozen biscuits and various breakfast meats for the week and he has been just as happy with those. So I would use it for that.

I use the regular grands dough to make donuts on saturday mornings. poke a whole in the middle and fry them up in the pan with about 2in oil. it sure beats having to make the dough from scratch like mom used to.

We would use them for breakfast with some eggs and bacon in between. Or when I feel adventurous, try the coffee cake recipe which sounds yummy.

I love biscuits. What I make from biscuits are fried apple pies. My grandmother taught me at an early age to make these pies. You cook down apples and add some apple pie spice. Roll out the biscuits and put the apples on one side. Fold over the bicuit to make a half moon pie. Take a fork and mash the edges together. Heat some oil in a pan and add the pies. cook until brown. These are a favorite of mine and a great memory I have of my grandmother.
