It truly is amazing how fast time flies. Can you believe it's the end of one year and the start of a new one?!? Unbelievable!
I just realized as I was typing that I need to come up with a meal plan for January. Holy cow! I'll post it later this week.
Speaking of this week. It's going to be a busy one. Our oldest son is in town, with that comes a lot of activities, more laundry, more cleaning, more spending time together as a family...
Last week we just played it by ear and changed up some of the meals from our monthly meal plan. You'll probably see a few repeats this week, only because we didn't eat them last week.
Speaking of last week, here are a couple of the things we enjoyed:
Lasagna Soup, one of my hubby's favorite soups.
Pumpkin Chocolate Caramel Cake* (sharing recipe later this week)
Here's our plan for this week:
Monday: Tex Mex: Turkey Taquitos*, Corn, Spicy Baked Sweet Potato Fries*
Tuesday: Pork Chops with Apricot Sauce*, Warm Lentil Salad*, Green Beans
Wednesday: Breakfast: Pancakes, Bacon and Oranges
Thursday: Spiral Ham (free from hubby's work), Baked Macaroni and Cheese, Mashed Sweet Potatoes, Green Beans, Broccoli Casserole*
Friday: Soup: Creamy Chicken Noodle Lipton Soup with Crackers* (using free box of Creamy Chicken Noodle Soup from Lipton and adding other veggies for another Pantry Meal)
Saturday: Visiting Family
Sunday: Subway Sandwiches, Baked Lay's
I'll be doing a little batch cooking this week:
- Pumpkin Spice Granola
- Banana Chocolate Chip Muffins (Krusteaz Banana Muffin mix free at Kroger, adding chocolate chips)
Our breakfasts, snacks and lunches will be:
- cereal with bananas, granola with yogurt, banana chocolate chip muffins, breakfast burritos
- soup, crackers, sandwiches, fruit, graham crackers with peanut butter or nutella
