These are yummy and without flour.

Chocolate Cherry Almond Cookies
2 cups sliced almonds, toasted
1/4 cup sugar
1 egg
1/2 teaspoon almond extract (gluten-free)
1/4 cup chopped dried cherries
1/4 cup white chocolate chips
4 Tablespoons softened butter
Add toasted almonds and 1/4 cup sugar to food processor or blender. Grind and process until very finely ground. Pour ground almond mixture into bowl, add slightly beaten egg, almond extract, dried cherries, white chocolate chips and butter. Mix well. Place the bowl in the freezer until chilled. Scoop onto a baking sheet lined with parchment paper. Bake at 350 degrees F for 10-12 minutes. Allow to cool completely and then carefully remove to cooling rack.
These are really yummy and you'd never guess they don't have flour! Amazing!
