RECIPE: No Bake Granola Bar

A few weeks ago, we were needing something healthy for the Hill Country 5K.  I thought about making some granola bars, but didn't want to bake them in our convection ovens at work.  They can be temperamental.  So I found a recipe that utilizes the stove top.  I've since been making them at home for the kids and we love them!

No-Bake Granola Bar (adapted from Rachael Ray Show)
4 Tablespoons butter (don't substitute with margarine)
1/2 cup packed light brown sugar
1/4 cup honey
2 cups old-fashioned oats 
1 cup puffed rice cereal (Rice Krispies)
1/2 cup dried cherries, chopped (you can use dried cranberries, dried apricots, chocolate chips*...)
1/2 cup chopped almonds (you can use pecans, peanuts, cashews...)
1/2 cup sweetened coconut (optional)

Melt butter in saucepan over medium heat.  Add brown sugar and honey.  Bring to boil and reduce to simmer until sugar melts about 2 minutes.  Remove from heat.

In a large bowl, add oats, rice cereal, chopped cherries, almonds and coconut.  Toss well.  Pour sugar mixture over the oat mixture and toss well to coat everything.  Pour everything into a 9x13 pan (I line mine with tin foil for easy clean up and removal of the bars) and press down evenly.  Pop into the fridge for about 15 minutes until hardened.  Turn out onto a chopping block and cut into bars.  Store in an air-tight container and enjoy for snacks or breakfasts.

*If you are adding chocolate chips, add them at the end and press them into the top of the bars before cooling.
