Meal Plan Monday 2/21/11

Last week we enjoyed a new soup, Ground Turkey with Barley.  I really loved it and Kevin liked it too.  So much so, he even ate some as leftovers on Saturday.  I know!  I couldn't believe it either.  But it was really that good.  We also had some friends over on Saturday night and ate one of my favorites, Sweet and Spicy Short Rib Tacos.  
YUM!  This time I used honey in place of brown sugar and they turned out just as good as last time.  Everyone loved them!

This week is going to be super busy.  We have the visit of our Circuit Overseer, I'm taking a cake decorating class on Monday nights for the next couple of weeks,  Kevin's schedule is changing again, so my work schedule will change for a few weeks, Sissy has ballet lessons on Monday, we're going to try to meet up with some friends on Tuesday...it's just going to be busy.  To help make the week run smoother, we're eating a couple of freezer meals:

Monday:  Slow Cooker Crock Pot Turkey Pot Pie (thawing from the freezer) with Biscuits

Tuesday:  Chicken, Chorizo and Tortilla Soup* (using chorizo, pre-cooked chicken, homemade chicken stock - all in the freezer waiting to be thawed) with avocado and cilantro cream

Wednesday:  Egg Omelet with Salsa and Turkey Bacon

Thursday:  Leftovers

Friday:  Thin Crust Tortilla Pizza - using Pepperoni and Veggies

Saturday:  Turkey Tetrazzini (thawing from the freezer), Steam Sweet Peas, Honey-Ginger Carrots

Sunday:  Country Style Pork Ribs using this rub, Green Beans, Steamed Broccoli, Baked Sweet Potato Fries

Breakfasts and Lunches are going to be tailored from my sparkpeople.com account.  I'm trying to learn to eat properly and more healthy.  It has been interesting to see how I've not been eating enough for breakfast.  And I'm not eating enough protein during the day.  Sparkpeople.com does all the work for me and I can change out meal plans, food items, entire recipes...it's fun and I love it.  A friend told me about sparkrecipes.com where I can plug in my own recipes to get the caloric value.  Have you tried it? 

Breakfasts:  Peanut Butter Toast with apple, cup of milk or Greek yogurt; Blueberry Cream of Wheat with Almonds and cup of milk; Corn Chex cereal with kiwi fruit, almonds and a cup of milk

Lunches:  Black Bean Nachos; Peanut Butter and Banana Whole Wheat Wrap with Baby carrots; Black Bean Soft Taco with fruit cup; Tortilla Pizza Margherita with Mandarin oranges

Snacks:  Apples with Peanut Butter; Chili Popcorn with Sunflower seeds; Turkey Sandwich with mustard; Cottage Cheese with Kiwi fruit and Sunflower seeds; Granola Bar

Desserts:  Lowfat Vanilla Ice Cream with strawberries and almonds; Applesauce Oatmeal Muffins (sharing recipe on Tuesday) with cream cheese

Looks like a great week. I've used Spark People in the past. It's a really good site, I just kind of drifted away from it... Good luck to you and enjoy your busy week!

That soup looks so yummy and healthy, I love that. Have fun at your decorating classes. I am going to take one of those one of these days.

I'm always so impressed by your meals Candi! You put so much thought and love into what you cook. I only do dinners and a few snacks. You amaze me with your lunches and long lists of what you make each week! Big kudos to you, this week looks like another great one!

If I don't write it down or at least make a note of it, I'll stand in front of the fridge for half an hour trying to figure out what to eat. It's just easier to figure it out first of the week and then I can reference the blog post during the week. Kind of lazy, but it works! :)
