Meal Plan Monday 3/7/11


Last week we got a stomach bug in the middle of the week, so we didn't eat too much.  Mostly Ginger Ale and pretzels, and free Lipton cup-o-soups from Publix.  However, we did eat a couple of our favorites at the beginning of the week:



and Country Style Pork Ribs with Rib Rub.  I put this in the crock pot and afterwards, pulled everything from the bones to make BBQ.  We ate this once and my hubby took it for lunch a couple of days.  I put the rest in the freezer for later. 

This is what we're going to be eating this week:

Breakfast:  Pumpkin Oatmeal with Cardamom, Cottage Cheese; Sausage Rice Scramble, Greek Yogurt with Fruit; Cereal with Banana, Yogurt Smoothies (I'll make the whole pot of oatmeal on Monday and we'll eat on it for breakfast until it's gone)

Lunch:  Sweet Potato with Black Bean Chili*; Grilled Ham and Cheese Sandwich with Baby Carrots and Fruit; Leftover Garbanzo and Chorizo Soup

Snacks:  Lowfat Vanilla Ice Cream, Fresh Strawberries with Cocoa Roasted Almonds; Apple with Peanut Butter and Greek Fat Free Yogurt;  Peanut Butter and Banana Smoothie (1 cup almond milk, 1/2 large frozen banana, 1/2 Tbsp peanut butter); Turkey Sandwich (reduced calorie bread, turkey slices with mustard) 

Suppers:
Monday:  Crock Pot Salsa Chicken* over Brown Rice with Broccoli and Green Beans

Tuesday:  Garbanzo and Chorizo Soup (going to try this without the chorizo, but add similar seasonings to get the flavor and use sweet potatoes since I have a bunch of those in the garage)

Wednesday:  Breakfast Casserole, Oranges, Yogurt

Saturday:  family dinner

Sunday:  Subway for Supper

Desserts this week?  We'll finish up the Chocolate Nut Dessert
