RECIPE: Orange Creme Loaf

I'm on a weight loss journey...

...and I crave sweets!  

I'm not fond of artificial sweeteners.  But when you want something sweet, and you're counting calories, desperate measures are in order.  

The other weekend, we visited my husband's family in Savannah.  I decided to make a dessert that everyone could enjoy.  Here's what I did:

Orange Creme Loaf
graham crackers
8 oz reduced fat cream cheese, softened
small package sugar free gelatin
1/4 cup boiling water
8 oz tub non-dairy light whipped topping (like Cool Whip Lite), thawed
can of mandarin oranges, drained

Line the bottom of an 8x5x5 loaf pan with plastic wrap.  Be sure to have enough to hang over the edges for later.  Fit graham crackers to cover the bottom; set aside.

In a large bowl, mix the cream cheese until smooth.  

In a separate bowl, whisk the gelatin into the boiling water.

Pour the gelatin into the cream cheese and mix until combined.  


Mix in the non-dairy whipped topping.

Fold in the mandarin oranges (don't use the electric mixer, it will break up the orange segments too much).

Pour into the prepared loaf pan.  

Cover the top with the plastic wrap and refrigerate for at least 4 hours or overnight.

To serve, use the plastic and lift the loaf from the pan.  Slice into 8 pieces and enjoy!

Don't you love how you can see the orange segments?!?!  I think that's my favorite part!

8 servings, 182 calories, 9.5 gr fat, 18.4 gr carb, 2.8 gr protein

This is really good and the combinations are endless.  I also made a strawberry one, using sliced fresh strawberries.  I can't wait to make a peach one using fresh peaches this summer!   

When I made this in Savannah, I poured it into a graham cracker crust, but those are very high calories.  So if you are not watching your weight and want to use a crust, go ahead, it's delicious!  The graham crackers get very soft, so don't expect a crunchy crust.  In fact, I might completely leave them out next time.
