Meal Plan Monday 4/11/11

Phew!  I'm pooped and we're not even halfway through the month.  It's been super busy over the last few days.  Funny how the best laid plans get derailed...

My intentions were to start the month off in the ministry on Friday the 1st.  Sissy had other plans.  Her tummy was hurting and since this wasn't the first time she's complained of it (actually, she's been complaining off and on over the past few months of pain in her side), I thought I'd better take her in to see the doctor.  So off we go to the doctor's office at 10 a.m.  Nearly 5 hours later, we made it back home.  She was constipated.  

I had a call at the bakery Thursday for a cake order for pick up on Saturday afternoon.  I baked the cakes to have them in the freezer waiting on me Saturday morning.  I get to the bakery and my friend (the other baker) used the cakes for something she put together on Friday.  UGH!  I almost started crying because this was my first decorated cake for a paying client.  I gathered myself together and hurried to bake another 3 chocolate layers (an extra for good measure).  The cake turned out fine.  The client LOVED it!  But I was tired, having to be there at 5:00 in the morning is exhausting.  

Sunday, I worked at the bakery in the morning, but overslept.  I got there at 7:45...OOPS!  Got home and went in the ministry for a few hours.  Monday, out in the ministry.  Tuesday, I worked at the bakery and then we had our meeting.  Wednesday back in the ministry and then met some great friends in Fayetteville so the kids could play at the park.  Thursday, back in the ministry and then home to do much needed, but dreaded, housework.  Friday we were supposed to go in the ministry, but I didn't get everything done on Thursday and frankly, I was tired!  So I did 6 loads of laundry, cleaned the bathrooms, helped the kids pick up their rooms and finished the kitchen.  Then we packed for our trip to Savannah.  Saturday, visited the Strawberry Festival in the morning, got home to take a nap, then back out in the afternoon for a couple of hours at the beach.  Sunday we were at the meeting and then drove back home.  PHEW!  I'll say it again.  

This week we'll be much the same.  Ministry Monday, Tuesday, Wednesday and Friday mornings.  Then meeting on Tuesday night and Saturday morning.  Sunday we'll have the commemoration of the Lord's Evening Meal. I'll be working at the bakery Monday and Wednesday night and all day Thursday.

Last week, we did manage to stay on track with our meal plan and I'm back to our $50 grocery budget.  We'll be eating from our stockpile for the next few months.  We wanted to purchase a cow for beef, but my freezer is too full and we aren't in a position to buy another freezer.  So using what we have in there will be a good thing.  It will reduce our grocery budget for the next few months, which tend to be lean income months anyway, and we'll clean out the freezer for our future beef.

Okay, so last week I made a new frittata, Potato and Spinach Frittata.  It was fabulous and figure friendly

I'm moving up the salmon meal from later on in the month since I used the shrimp for the Shrimp Creole recipe last week.  It was totally delicious by the way, you have to try it!  I'll pick up some shrimp and chicken at ALDI during my grocery trip this week. 

Speaking of this week, we'll be eating:

Monday:  Bean Chalupas with Guacamole Salad and Tomatoes

Tuesday: Teriyaki Grilled Salmon*, Steamed Veggies, Brown Rice

Wednesday:  Rabbit in the Hole with Turkey Bacon and Oranges

Thursday:  Stacy's Southwestern Chicken & Rice  (it might be without chicken, depends on if there is any chicken left in the freezer)

Friday:  Thin Crust Pizza with Salad (I'm going to be using the Ole Mexican Xtreme Wellness tortillas.  They have some great flavors like Spinach and Herb and Tomato Basil. 

Saturday:  Pineapple Pork Chops* Green Beans and Steamed Broccoli with Oven Baked Cheese Fries


We're trying three new recipes this week.  Saturday is supposed to be leftover night, but I doubt we'll have leftovers this week...

I need to eat from my stockpile and get my grocery bill down too! My freezer is also packed and I'm torn since berry season is coming up.... I need to make room! :-)

I hope you have a more settling, easy week! Looks like the meal plan is a great one.

P.s. - the job interview is for a clerical position at a local university here in Pensacola. My interview is Wednesday. I'll reveal more if I get it or if there is more to tell. I'm excited though. I've always wanted to work at a college and have potential to return to school. So we'll see.....

My goodness! You sure have been busy. I got tired just from READING of your week. :) Your menu looks great, especially the pineapple pork chops. I haven't made any since last summer, I'll have to dig the recipe up. Have a great week Candi!
