Meal Plan Monday 5/30/11


Busy busy busy.  That's how it's been lately.  I'm ready to slow down for a few weeks.  Unfortunately, that doesn't look like it's going to happen until the middle of June, maybe.  

Last week, we were so busy, I didn't even blog anything.  We enjoyed our circuit assembly, "You are no part of the world" in Conyers.  We saw some of our friends we don't see very often.  That's always fun!  Monday started off with me working the morning shift and then we had to run to the doctor's office to pick up Sissy's shot records for kindergarten registration.  After that we went by the library to pick up some books.  Then on to ballet lessons.  When ballet lessons were done, we went by the grocery store to pick up some food.  We drove to the meeting for volunteers for the recital.  I think we got home around 7:30 p.m.  

Tuesday I worked the early shift at the bakery to finish up an order.  Then I came home to take Sissy to visit the public school she'll be attending in the Fall.  (The Charter School will be postponed for at least a year, so we decided to register her at the public school to see how that works out.)  The principal toured us around the school and we met most of the kindergarten teachers.  We got home around 4:30 and started supper.  We have our meeting Tuesday night, so we didn't get home until around 9:45 p.m.   

Wednesday, we met my cousin and her girls at Callaway Gardens and spent the day at the little beach there.  The kids had so much fun!  We got home around 4:30, ate supper and then I went to work at the bakery for the evening shift.  

Thursday I worked my normal schedule but left at noon so I could carry my Momma to the grocery store and then to pick up her car at the shop.  A terrible storm came through as we were getting some food at the Chick-Fil-A and we decided to eat in the restaurant until the storm passed.  We got home around 7:30.  Friday I cleaned and did laundry since we hadn't been home all week and we needed clean clothes to visit our family in Savannah.  My husband got home at 2:30 and we left at 3 to head out of town.  We got home early Sunday around 6:30.

Last week, I had hoped to get some freezer cooking done, but as you can see, I didn't get anything done at the house.  I'm hoping this week will be different, and I can get some things in the freezer.

Batch Cooking this week:
Pizza Rolls - My husband has fallen in love with these things.  I'm thinking I need to double the batch since he's been eating them 2 and 3 at a time!  And he's been eating them for breakfast!  Thanks to Debbi for sharing this recipe on her blog.  She has some great easy fix meals.  Be sure to visit her.  By the way, she's a fellow sister who lives up North. 

Breakfast Burritos - I need some fast breakfast ideas and this is my favorite go-to.

Brown Rice - I used up the last frozen bag of rice last weekend for my salads.

Banana Oat Muffins - The kids loved these as a morning snack and I bought some bananas from Walmart that got really mushy after only a couple of days on the counter.  I popped these into the freezer, so this is a great way to use them up.   I'm going to do a double batch.

Here's what we're eating:

Monday:  Sloppy Toms, Baked Sweet Potato Fries, Pickles and Salad

Tuesday:  New Recipe:  Lemonade Chicken, Brown Rice, Steamed broccoli and green beans

Wednesday:  Breakfast:  Rabbit in the Hole, Turkey Sausage, Mandarin oranges

Thursday:  Tex-Mex - Easy Bean & Cheese Burritos with Guacamole Salad and Corn and Tomato Salad

Friday: Pizza Night - Pizza Rolls*

Saturday:  Turkey Dinner

Sunday:  Leftovers

Lunches:  Leftover Lemonade Chicken turned into Asian Chicken Salad, Fiesta Salad, Easy Chef Salad

Breakfasts:  Cottage Cheese, Kiwi and almond slices with peanut butter sandwich;  Yogurt with peanut butter and banana toast with hard boiled egg;  Oatmeal with blueberries and peanut butter and scrambled egg whites with salsa and cheese

Snacks:  Turkey wrapped string cheese with apple;  Strawberry Smoothie and hard boiled egg;  Kettle Corn Popcorn

So glad you enjoyed the assembly! I'm excited for the convention coming up. Glad hubs likes the pizza rolls, they are good, I need to make those again too.

That Rabbit in a Hole sounds good, I've seen it before but have never made it. I LOVE breakfast food!
