Meal Plan Monday 6/6/11

Sorry I haven't been blogging much lately.  I've been sharing most of my stuff on Facebook.  I've been practicing my cake decorating and had the opportunity to make a baby shower cake for the weekend.  Here's a picture of it:


It turned out really cute!  Turns out my friend Elizabeth loves bumblebees!  I had no idea.   
This is the second Ruffle cake I've done. 

The first one was pink for an "It's a Girl!" gender announcement.

So what are we eating this week?

Well, I actually baked our turkey on Saturday night.  So we have some leftovers I can turn into some freezer meals.  I'll have to think about that.  I also got some freezer cooking done last week.  We have breakfast burritos, pizza rolls, carrot and apple pulp muffins, simple bean burritos and black bean and tomato soup.  All in the freezer waiting on me.  I love that!  Sissy has her recital this weekend so we're very excited about it.  I'm planning a Mexican Fiesta for the evening with some friends.  Can't wait!

Monday:  Simple Bean Burritos, salsa, salad and corn

Tuesday:  Grilled Chicken Bruschetta*not sure what to have with this?  what would you serve?

Wednesday:  Leftovers or Pizza Rolls

Thursday:  Breakfast for Dinner - Scrambled eggs, turkey sausage and fruit salad

Friday:  Pepperoni and Pineapple Tortilla Pizza with Salad

Saturday:  Ballet Recital in the morning until noon and then we're going to have some friends over for a get-together.  I'll probably make some cupcakes (I need a good excuse to make some yummy treats!)  Pina Colada Cupcakes and some chocolate cupcakes.  Mexican Food - Chimichurri Burrito Casseroles for the carnivores, Simple Bean Burritos for the vegetarians, Guacamole, Mexican Rice & Beans, Salsa, Chips, Corn and Tomato Salad, Jodi's 7 Layer Dip, Black Bean Salsa.  And we're gonna make Margaritas!!!  Yum!  

Sunday:  Leftovers for lunch;  Buffalo Chicken Burgers, Oven Cheese Fries, Carrot and Celery Cole Slaw with Blue Cheese dressing* (I'm making this up using these two recipes:  Dave's and Rachael's

I have made the Pina Colada Cupcakes they are soooo yummy! This icing is a little rich though, you might want to lighten it up by adding cool-whip to cut the sweetness and fat.

Thanks for letting me know. I was wondering about that. Maybe leave out the sugar? We'll see. Taste-testing can be fun!
