Meal Plan Monday 7/25/11

We spent part of the weekend at the Convention.  We attended Friday and Sunday and will be attending the Convention on August 20th for the Saturday portion.  It was wonderful and very encouraging information.  Learning to be balanced in all aspects of our life, focusing on our young ones, getting our lives in order so when God's Kingdom reigns over the earth, we'll be prepared.  It was wonderful!  We saw lots of old friends and met some new ones.  

We ate out most of the weekend so I'm ready for some homecooking!

We've been eating out more often than not on Thursday nights.  I'm usually exhausted from being on my feet all day at work and I don't feel like cooking anything for supper.  So to help alleviate another food bill, I'm moving my crock pot meal to Thursday so it will be ready when I get home.  We have our Family Worship night on Thursday, so now we can be focused and relaxed for worship and not be frantically trying to get home from a restaurant.  This week, we'll be eating the following:

Monday: Thin Crust Pizza and fruit

Tuesday: Dump Chicken - Sticky Chinese Chicken (using leftovers on Friday), Honey Ginger Carrots, Brown Rice and Steamed Broccoli (didn't get to this last week)

Wednesday: Breakfast - Homemade Pancakes (making double batch so I can freeze some for breakfasts), fruit and yogurt parfaits

Thursday: Crock Pot - My Momma's Seasoned Pork Roast, potato wedges, carrots, celery, onion sharing recipe on Sissy's recipe blog

Friday: Rice Meal Kit - Chicken Fried Rice (using leftover chicken), Steamed Broccoli and Green Beans

Saturday: Tex Mex - Lentil Tacos with all the fixings. 

Sunday: BBQ Pork Sandwiches (using leftover pork, shredded and adding BBQ sauce), Cole Slaw, Refrigerator Dill Pickles and Baked Oven Cheese Fries

TO DO LIST:
I need to make some Homemade Crunchy Granola for the parfaits and some snacks, cook some lentils for the tacos, thaw out the chicken for tomorrow's meal.  

Breakfast has been oatmeal with peanut butter, frozen blueberries and a cottage cheese bowl with fruit and chopped almonds.  I boiled a bunch of eggs and so we'll be eating those for breakfast with fruit and yogurt.

Lunches will be chilled tomato soup I made from some yellow and red cherry tomatoes from my parent's garden (I hope to share the recipe soon), with quesadillas and fruit;  ham and tomato sandwiches with fruit;  tuna salad sandwiches with tomatoes and fruit (can you tell we have lots of tomatoes from the garden!?!)

Love the lentil tacos! I've never made homemade granola either, I should though! Thanks!

Glad the convention went well, your menu looks delicious, I have to try the lentil tacos, I know I would love them.
