Am I the only one who continues to add 2011 to the date??? I'm not ready for 2012 obviously...
Today and tomorrow I'm working on our OAMC plan for March. So here's the plan this week:
Monday: Chicken Fajita Soup (we have leftover chicken and peppers in the fridge and this sounds like an obvious choice)
Tuesday: Crock Pot Cashew Chicken* rice and Honey Ginger Carrots
Wednesday: Breakfast Southwest Scramble over Baked Potato* (I made this last week and it was really good. I'll share the recipe soon.)
Thursday: Crock Pot - Apricot & Mustard Dump Chicken, Rice and Broccoli and Green Beans
Friday: Pizza Night
Saturday: Lunch: Sweet and Spicy Turkey Sloppy Joes over mashed potatoes with peas; Dinner: Lasagna, rolls and salad
Sunday: Lunch: Leftovers; Supper:Classic 1983 Bean Nachos with salsa, sour cream and avocados
For breakfast this week I'm eating 1/2 cup plain nonfat Greek yogurt with 2 Tbsp apricot jam and peanut butter sandwich (1 Tbsp creamy peanut butter on 80 calorie wheat bread).
For lunch this week I'm eating leftover soup or turkey and avocado sandwiches on 80 calorie wheat bread with apples. The kids are eating Shrimp Ramen or Macaroni and Cheese with turkey hot dogs and fruit.
Snacks are turkey wrapped mozzarella cheese sticks and apples and late night popcorn.
