Meal Plan Monday 12/21/15

I have a friend who is a widow and has no children.  We were talking the other day about how to cook for one.  She finds it boring to cook one big meal and eat on it all week long.  So I suggested she make that one big meal but then change it into different things throughout the week.  Here's what I'm doing this week.  Our little grocery store has hams on sale for $.53 lb.


Monday:  Ham, mac and cheese, peas and mashed potatoes

Tuesday:  Ham Fried Rice with carrots, cabbage and broccoli

Wednesday:  Lentil and Ham Soup

Thursday:  Ham and Eggs with oranges

Friday:  Chicken Cordon Bleu Casserole with green beans

Saturday:  Lunch out and Pizza for dinner

Sunday:  Lunch - Leftovers;  Dinner out with friends
