Meal Plan Monday 10/12/09
Monday: CrockPot Rotisserie Chicken or Whole Chicken Recipe with roasted green beans & potatoes (Double Duty meal #1)
Tuesday: Easy Chicken and Dumplings (Using leftover chicken from Monday) Then using carcass to make Chicken Stock.
Wednesday: Eggs, Grits & Toast
Thursday: Chili/Taco Soup (Double Duty Meal #2)
Friday: BBQ Chicken Pizza using Homemade Pizza (add 1/2 tsp McCormick's Italian Seasoning Grinder to the flour)
Saturday: BBQ Chicken over rice with veggies
Sunday: Chili Burrito Bake (I'm going to cook up about 1 cup of rice and mix it with about 1 cup of the leftover Chili from Thursday. Then warm up some tortillas and stuff them with this concoction plus shredded cheddar. I'm going to put them in an 8x8 casserole dish and top with more cheddar and bake at 350 for 20 minutes or until the cheese is bubbly.)
