Everyone is talking about the Super Bowl and what they are going to be cooking up for their family. I don't know about you, but we watch the Super Bowl for the commercials. We love to eat snacky foods during these games. Usually we have Buffalo Chicken Wings or Chili. And then for our snacky stuff we usually eat:
1/2 red onion, very finely diced
1 jalapeno, seeded and very finely diced
juice and zest of one lime
1/2 teaspoon garlic powder
1/2 teaspoon salt (adjust this to your liking)
1-3/4 cup black beans or 15 oz can black beans, rinsed and drained
1 cup seedless cucumber, diced
1 tomato, seeded and diced
1 cup frozen corn
1 avocado, diced
2 tablespoons chopped cilantro
In a mixing bowl, combine the onion, jalapeno and juice & zest of lime; set aside to "bloom", the color of the onions will actually change after a few minutes. Allowing this to "bloom" will reduce the sharp bite from the onion and the pepper, it makes it more palatable and more mellow. Add the remaining ingredients and toss lightly to combine. Serve with tortillas chips!
1/2 cup mayonnaise
1/4 cup cream cheese
10 oz box frozen chopped spinach, thawed and squeezed dry
1 can quartered Artichoke hearts, drained and chopped
4 oz crumbled Feta cheese
2 plum tomatoes, seeded and diced
1/4 cup garlic stuffed green olives, chopped
1/4 teaspoon salt
1/8 teaspoon ground black pepper
In a mixing bowl, combine mayonnaise and cream cheese until smooth. Add remaining ingredients and stir well to combine. Cover and chill for 30 minutes. Serve with chips and toasted french bread points or as an accompaniment to a vegetable platter.
Jodi's 7 Layered Dip
1 can refried beans or 1-3/4 cup mashed pinto beans
2-1/2 tablespoons taco seasoning or 2 tablespoons chili powder + 1 teaspoon cumin + 1 teaspoon oregano + 1/4 teaspoon salt
Sour Cream
Shredded Cheddar Cheese
Sliced Black Olives
Sliced Green Onions
Seeded Chopped Tomatoes
Mix refried beans or mashed pinto beans with taco seasoning then spread into a 9x13 casserole dish. Next spread guacamole, then sour cream. Make sure the sour cream is completely covering the guacamole or it will brown. Next layer the cheese and sprinkle the top with olives, onions and chopped tomatoes. Serve with chips or veggies.
Chipotle Ranch Dip
1 cup mayonnaise
1 cup light sour cream
1/4 teaspoon ground chipotle chile pepper
1/2 teaspoon ground cumin
1 packet Hidden Valley Ranch dip or dressing (either works good)
2 teaspoon taco seasoning, optional
Combine everything in a bowl and refrigerate overnight. Serve with carrot and celery sticks. Also really good to dip your chicken wings into!

Oh side note- on the hot wing dip I think I told you wrong about the amount of chicken it needs to three or four (about 1 lb) chicken breast-- sorry:(
