RECIPE: Meringue by Jamie Oliver


This week at I Blame My Mother, we're working on chef Jamie Oliver's recipes for the FNCCC.  I chose to make something I've never made before:  MERINGUE!  Jamie calls this Tray-Baked Meringue with Pears, Cream, Toasted Hazelnuts and Chocolate Sauce.  I don't like hazelnuts and didn't have any pears on hand, so this is how I put my twist on it:


Tray Baked Meringue with Cherries, Pecans and Chocolate
4 egg whites 
1-1/4 cup sugar
pinch of salt
1/2 cup chopped pecans
7 ounces semi-sweet chocolate, melted
4-5 maraschino cherries, chopped

Preheat oven to 300 degrees F.  (The recipe recommends using waxed paper, but I only have tin foil.)  Line a small baking sheet with tin foil and spray with non-stick cooking spray.  Add egg whites to a very clean bowl (the recipe says to make sure there are no shells or yolks).  Using an electric mixer, beat on medium speed until egg whites are stiff.  Gradually add sugar and salt and beat until glossy and stiff peaks (about 7-8 minutes).  Spoon meringue onto the prepared baking sheet, pushing and swirling to shape a rectangle.  Bake for 1 hour until outside is crispy and the inside is sticky.  Remove from oven and pour melted chocolate over the top.  Sprinkle with chopped pecans and cherries.  

This was so good!!!  It looked beautiful and tasted light and delicious.  And it was so easy!

Definitely a winner.

I have never made meringue either, and this looks lovely! Like a fluffy sundae - nice take on the original. I'll have to give it a shot sometime. Thanks for cooking with FNCCC~

I like your twist -- what a sweet treat for valentine's day! would it still be tasty without nuts?

It would totally be good without the nuts. The outside is sort of crispy and gives you the texture you might miss with the nuts. It was really good and I couldn't believe how easy it was!
