Also made a Spinach, Apple and Cheddar Salad to accompany a Spinach and Ham Frittata.
Weekly Breakfasts: Pumpkin Oatmeal Breakfast Cookie, Apple Cinnamon Oatmeal with Blueberries; Cinnamon Oatmeal Pancakes with Fried Apples; Cereal with Bananas
Weekly Snacks: Graham Crackers with Peanut Butter and yogurt; Mozzarella Cheese sticks with Apple slices and yogurt; Berry Banana Smoothies
Weekly Lunches: Pumpkin Vegetable Soup with Bulghur Wheat, Grilled Apple and Cheddar Sandwiches, Cheddar Cheese and Macaroni
Monday: Crock Pot Rotisserie Chicken Green Beans and Steamed Cauliflower with Cheese
Tuesday: REMAKE: Creamy Tomato Basil Pasta with Chicken* with Salad
Wednesday: Stuffed French Toast with bacon* with Fresh Fruit
Thursday: Bean Tostadas with Sante Fe Salad
Friday: Homemade Pizza Night
Saturday: Spaghetti with Meatballs and green beans
Sunday: Our 12th Wedding Anniversary, Dinner Out

The Spinach, Apple and Cheddar Salad sounds like a great combination and adds a nice variety to salad nights. The Spicy Pineapple Beef recipe sounds like a great way to use up leftover roast beef. A question for you...what would you use to substitute the jalepeno peppers? Not something I typically buy or our family eats...
