Monday: Tex Mex: Burrito Casserole* with Sante Fe Salad
Tuesday: Crock Pot Chicken, Red Quinoa Pilaf*, Sweet Peas and Carrots
Wednesday: Breakfast: Pancakes, Bacon and Grapefruit
Thursday: Soup: Italian Sausage Vegetable Soup, Peasant Bread
Friday: Pizza Night
Saturday: Ham and Cheese Sandwiches, Veggie Chips, Apples for lunch; Supper out?
Sunday: Leftovers or Sandwiches for lunch; Classic Nachos for supper
We're trying a few new recipes (*) this week and eating a few favorites. Italian Sausage Vegetable Soup is my all-time favorite soup. My Momma made this every winter while we were growing up. She'd brown the sausage in a little balls and then cook up the soup. The next morning, my brother and I would sneak into the refrigerator to eat all the sausage. Our Momma would get so mad, but the sausage was SO good! This soup gets better over time. So if you make it on Sunday afternoon, wait and eat it for supper Monday night. It also makes a fantastic vegetable soup. Just leave out the sausage and substitute vegetable broth for the beef broth. It's so good!

Ha! I have to laugh.... we both have Mexican lined up for Monday night and a crockpot chicken lined up for Tuesday! I love it! Looks like we have great meals on the horizon! Have a great week my friend!

I just made a crapload of pancakes this weekend to freeze for the kids. I hate pancakes, but I make them for them... My son LOVES them.
