RECIPE: Chicken Chorizo Soup

My cousin Brenda told me about this recipe.  She said they loved it and since we had some Mexican Chorizo Sausage in the freezer, I thought I'd try it too.  It was really good!  My husband (you know, "the picky one") loved it so much, he ate leftovers for lunch and supper for the next 2 days.  That's an amazing feat in itself!  If you haven't tried it, you need to.  First let me explain something about Chorizo.  There are a couple of different kinds that I know of.  There is a hard sort of sausage link, much like a pepperoni log and there's a soft, raw kind of sausage.  I used the latter for this recipe.  Here's how I made it:

Chicken Chorizo Soup (adapted from Rachael Ray)
8 oz Mexican chorizo sausage, raw kind
1/2 cup chopped onion
1 red bell pepper, diced
3 garlic cloves, minced
14.5 oz can fire-roasted tomatoes
14-15 oz can pinto beans 
4 cups chicken stock
1 precooked chicken breast, diced
1 large potato, diced
2 tsp Tabasco sauce
salt and pepper
queso fresco (optional)
fresh cilantro (optional)
diced avocado (optional)

Preheat medium soup pot over medium-high heat.  Add chorizo and cook for about 8-10 minutes until the oil comes out of the sausage.  Add onions, pepper and garlic and saute for another 5 minutes.  Add the fire-roasted tomatoes, pinto beans, chicken stock, chicken breast to the pot and bring to a boil.  Add the diced potatoes and Tabasco and cook another 15-20 minutes. 
Ladle up a serving and top with queso fresco, cilantro and avocado and enjoy!

Calories: 333, total fat: 11 gr, carbs:  43.8 gr, fiber:  6 gr, protein:  16.5 gr
