RECIPE: Easy Pumpkin Chocolate Chip Muffins

This is not a new recipe.  I first heard of it from my friend Tara (hi Tara!).  She's a great cook.  She's one of those people who rarely follows a recipe, but makes incredibly tasty food.

Here's the recipe:
Easy Pumpkin Chocolate Chip Muffins
1 box yellow cake mix (or *spiced mix if you can find them)
4 eggs
1/4 cup oil
1/4 cup milk
15 oz can pumpkin
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon ground coriander
2 cups chocolate chips, divided

*If you find a spiced cake mix, don't use the above spices.

Mix everything together except 1/2 cup chocolate chips.  Spray muffin pan with non stick cooking spray and scoop mixture evenly.  Sprinkle the remaining chocolate chips on top and bake at 350 degrees F for 18-20 minutes, or until a toothpick inserted comes out clean.

Makes 18 muffins.

Try this with chocolate cake mix too.  So good!

I love these easy recipes! I haven't made pumpkin muffins yet this year, looks like that is what the kids will get next! Thanks!
