We had a pretty good weekend. Sissy's friends came over for a Tangled Party. I'll share the pictures on Wednesday. We had an encouraging talk by a brother we've known for years. It was about God's mercy and how we can be merciful to others. Very, very upbuilding. We celebrated my parent's anniversary of 39 years with a turkey dinner. The turkey was beautiful and the food was good. We have quite a bit leftover, so this week I'll be doing a freezer day and make a couple things with the turkey. Maybe Turkey Tetrazzini and then freezing the leftovers for a Turkey Wreath.
My week will be a little wacky. We have our meeting Monday night instead of Tuesday. The Circuit Overseer is making his rounds with the one of the other congregations. I'll be working in the mornings since my husband will need to work later into the evening this week. I have cake orders for the weekend. I'm very excited about them. They are relatively simple, compared to the barnyard cake and the tea & hat cake. We have a going-away party for an older couple in the hall. I think it's on Friday but the date has changed, so I'm a little unsure. My husband's parents might be coming up for the weekend, so that will be fun. The kids enjoy their visits.
Last week we tried a new recipe called Pumpkin & Sausage Pasta. I really liked it. My husband ate it, but said he didn't love it. I didn't tell him it was pumpkin. But his tummy was hurting pretty badly afterwards from the whole wheat pasta. He's a "white bread" kind of person anyway. Anytime he eats whole wheat anything, he gets an upset stomach and the hiccups. Weird? Yes! I wonder sometimes if he doesn't have some kind of wheat allergy, but he eats white pasta and bread without any trouble. We didn't get around to the other two dishes, so you'll see them again this week on the menu.
Monday: Leftovers from Sunday, roasted turkey, mashed potatoes, squash casserole, stuffing and green beans.
Tuesday: Chicken and Rice Casserole - using turkey (I'll make two and freeze one for later)
Wednesday: Mexican Chicken Tortilla Soup - shredding turkey (I'll also make Turkey Tetrazzini for the freezer this day)
Thursday: Teriyaki Turkey Wraps* - I have some cabbage leftover from last week, so I'll use that instead of broccoli slaw
Friday: Tex Mex - Cheesy Enchilada Stack*
Saturday: Crock Pot - Chicken Ropa Vieja* over brown rice
Sunday: Shepherd's Pie with Easy French Bread

Wow your a busy lady! And how strange about your hubby and the whole wheat pasta, hmm.
My husband wouldn't have liked the pumpkin and sausage either. What is wrong with these guys?
I made this last night and my husband and I loved it! My kids, not so much, but that didn't surprise me. I love recipes that I can use pumpkin in!
