Monthly Meal Plan: April 2010

April is here and with it comes warmer weather!  I love Springtime and the 70 degree weather.  I'm going to plan to do easy meals this month and use up some of the meals I created over the last few months that we never got around to eating for one reason or another.  I've planned the oamc day so here's the meal plan:

Monday:  3 Course Meal
Tuesday:  Breakfast for Supper
Wednesday:  Tex Mex Night
Thursday:  Italian Night
Friday:  Pizza and Family Movie Night
Saturday:  Fast & Easy Lunches & Eating Meals from the Freezer
Sunday:  Fast & Easy Lunches & Sandwiches for Supper

3.  Lunch:  Bean & Cheese Burritos; Supper:  Mini Meatloaves with Mashed Potatoes and Peas for us and Green Beans for hubs Fish Tacos with Crunchy Cabbage Slaw and Rice and Beans
4.  Lunch:  Salsa Chicken Tostadas (using leftover pork);  Supper:  Sloppy Joes, Oven Fries, Green Beans
5.  Easy Shrimp Scampi over Pasta with Steamed Broccoli for us and Green Beans for hubs
6.  Pancakes and Sausage
7.  Tacos with the Fixings
8.  Spaghetti with Salad and French Bread
9.  BBQ Chicken Pizza - on the road
10.  Visiting Family and attending the Strawberry Festival outside of Savannah, Georgia
11.  Traveling home 
12.  Mini Meatloaves, Mashed Potatoes and Peas for us and Green Beans for hubs Teriyaki Orange Ginger Fish & Noodles with Carrots and Broccoli
13.  Eggs, Sausage and Grits
14.  Bean Burritos with Rice & Beans
15.  Chicken Alfredo Florentine Pasta for us and Creamy Chicken Pasta for hubs
17.  Lunch:  Bean Nachos;  Supper:  Apricot Mustard "dump" Chicken (in the Crock Pot) rice and veggies
18.  Lunch:  Bean Quesadillas:  Supper:  Sloppy Joes, Oven Fries, Green Beans
19.  Easy Shrimp Scampi over Pasta with Steamed Broccoli for us and Green Beans for hubs
20.  Pancakes and Sausage
21.  Tacos with the Fixings
22.  Spaghetti with Salad and French Bread
23.  BBQ Chicken Pizza with Salad
24.  Lunch:  Salsa Chicken Tostadas (using leftover pork);  Supper:  Autumn Glaze "dump" Chicken (in the Crock Pot) rice and veggies
25.  Lunch:  Bean Quesadillas;  Supper:  Beef Tips over rice and veggies
26.  Mini Meatloaves, Mashed Potatoes and Peas for us and Green Beans for hubs Fish Tacos with Crunchy Cabbage Slaw with Mexican Rice
27.  Eggs, Sausage and Grits
28.  Bean Burritos with Rice & Beans
29.  Lasagna with Salad and French Bread (stay tuned for the recipe)
30.  Black & White Pizza with Salad

***UPDATE 4/1/10 - I'm in the kitchen browning ground beef when I realized I browned ALL 7 lbs of ground beef...I was supposed to keep some aside for the Mini Meatloaves mentioned above.   Since ground beef is not on sale right now, I'm going to dig out a couple of frozen Starkist Seasations I have leftover in the bottom of the freezer.  We sort of got burned out on these last year and I tucked them away for another day...well, that day has come.  Improvising is always fun, right?

Looks like a great plan to me! We never get tired of Mexian or Italian (pizza or spaghetti) dishes in our house. My husband asks for pizza once a week but I try to vary it to every other week and substitute it with a pasta that is similar to pizza. In fact, if you add some cut up hormel turkey pepperoni slices to your normal spaghetti meal, it gives it a great "pizza flavor."

Oooh a strawberry festival sounds fun! I haven't been to one in ages! Have a great time! If you bake anything with strawberries, please share the recipes!
