Wow, what a whirlwind the last few weeks have been! Since I started working outside the home, my life seems to be getting busier. I almost forgot to get together our monthly meal plan. I was able to get a great deal on some beef roasts and beef strips (for fajitas and stir fry) from Publix last month so it's been waiting on us in the freezer. We'll be "stretching" the beef roast leftovers into a few other meals.
Here's the plan:
Monday - Crock Pot meal to stretch for the week
Tuesday - remake and leftovers
Wednesday - breakfast for supper
Thursday - remake Tex Mex style
Friday - pizza night
Saturday - sandwiches; quick and easy suppers
Sunday - sandwiches; Italian suppers

- Lunch: Mexican Beef & Rice Burritos (from the 5th); Supper: Crock Pot Lasagna, Salad, Garlic Bread Sticks
- Rotisserie Chicken (crock pot) Potatoes, Green Beans
- Chicken REMAKE: Shredded BBQ Chicken over Mashed Potatoes with Peas
- Quiche Lorraine with tomato slices
- Chicken REMAKE: Stacy's Southwest Chicken & Rice
- Hawaiian Pizza
- Lunch: Nachos; Supper: DATE NIGHT WOOHOO!!!!
- Lunch: Tuna Sandwiches; Supper: Spaghetti, Salad, Garlic Bread Sticks
- Beef Roast (Crock Pot), Beef Gravy, Mashed Potatoes, Peas
- Beef Roast REMAKE: Shredded Beef Au Jus over Rice and Green Beans
- Hash with Eggs, Potatoes, Sausage
- Beef Roast REMAKE: Shredded Beef Tacos, Mexican Rice & Beans (making Burritos with leftovers)

- Lunch: Subway; Supper: Pepperoni Pizza
- Rotisserie Chicken (Crock Pot) Twice Baked Potatoes, Green Beans
- Mexican Beef & Rice Burritos (leftovers from the 19th)
- Pancakes with Sausage
- Stacy's Southwest Chicken & Rice
- Meat-a-tarian Pizza
- Lunch: Tuna Sandwiches; Supper: Nachos
- Lunch: Quesadillas; Supper: Chicken Alfredo Lasagna, Salad with Garlic Bread Sticks
- Beef & Broccoli Stir Fry over Rice and "Won Ton Soup"
- Leftover Chicken Alfredo Lasagna
Haylei starts PreK this month so we are very excited! Can't wait to see how the month goes!
