Monthly Meal Plan: August 2010

Wow, what a whirlwind the last few weeks have been!  Since I started working outside the home, my life seems to be getting busier.  I almost forgot to get together our monthly meal plan.  I was able to get a great deal on some beef roasts and beef strips (for fajitas and stir fry) from Publix last month so it's been waiting on us in the freezer.  We'll be "stretching" the beef roast leftovers into a few other meals.

Here's the plan:
Monday - Crock Pot meal to stretch for the week
Tuesday - remake and leftovers
Wednesday - breakfast for supper
Thursday - remake Tex Mex style
Friday - pizza night
Saturday - sandwiches;  quick and easy suppers
Sunday - sandwiches;  Italian suppers
  1. home from Savannah, found some Hormel BBQ Pork in the freezer, serving over baked potatoes with salad
  2. Beef Roast (crock pot) Potatoes, Carrots, Onions, Celery, Yorkshire Pudding
  3. Beef Roast REMAKE:  Shredded BBQ Beef Sandwiches, Spicy Sweet Potatoes Fries, Cole Slaw
  4. Eggs, Bacon & Cheese Frittata
  5. Beef Roast REMAKE:  Shredded Beef Tacos, Mexican Rice & Beans (making burritos with leftovers)
  6. BBQ Chicken Pizza
  7. Lunch:  Tuna Sandwiches; Supper:  Nachos
  8. Lunch:  Mexican Beef & Rice Burritos (from the 5th); Supper:  Crock Pot Lasagna, Salad, Garlic Bread Sticks
  9. Rotisserie Chicken (crock pot) Potatoes, Green Beans
  10. Chicken REMAKE:  Shredded BBQ Chicken over Mashed Potatoes with Peas
  11. Quiche Lorraine with tomato slices
  12. Chicken REMAKE: Stacy's Southwest Chicken & Rice
  13. Hawaiian Pizza
  14. Lunch:  Nachos;  Supper:  DATE NIGHT WOOHOO!!!!
  15. Lunch:  Tuna Sandwiches;  Supper:  Spaghetti, Salad, Garlic Bread Sticks
  16. Beef Roast (Crock Pot), Beef Gravy, Mashed Potatoes, Peas
  17. Beef Roast REMAKE:  Shredded Beef Au Jus over Rice and Green Beans
  18. Hash with Eggs, Potatoes, Sausage
  19. Beef Roast REMAKE:  Shredded Beef Tacos, Mexican Rice & Beans (making Burritos with leftovers)
  20. Pizza Pockets
  21. Family Supper
  22. Lunch:  Subway;  Supper:  Pepperoni Pizza
  23. Rotisserie Chicken (Crock Pot) Twice Baked Potatoes, Green Beans
  24. Mexican Beef & Rice Burritos (leftovers from the 19th)
  25. Pancakes with Sausage
  26. Stacy's Southwest Chicken & Rice
  27. Meat-a-tarian Pizza
  28. Lunch:  Tuna Sandwiches;  Supper:  Nachos
  29. Lunch:  Quesadillas;  Supper:  Chicken Alfredo Lasagna, Salad with Garlic Bread Sticks
  30. Beef & Broccoli Stir Fry over Rice and "Won Ton Soup"
  31. Leftover Chicken Alfredo Lasagna
Haylei starts PreK this month so we are very excited!  Can't wait to see how the month goes!
