Menu Plan Monday 9/6/10

It was a busy weekend.  I'm so glad we have a monthly meal plan in place.  It's amazing how much smoother our life runs with that thing!  I'm going to do a little batch cooking this week, I think.  I thawed out some shredded zucchini to add to our meatballs during last week's OAMC day.  I'm going to make some chocolate chip zucchini muffins and when I make the Cheese Sauce, I'll triple it to freeze some for later.  I also need to make some Sub Rolls using my French Bread recipe.  And last but not least, I'll make some Crunchy Granola since I didn't get around to it last week.

Since it looks like Haylei didn't make it into the PreK at the Daycare, we'll be homeschooling starting on Monday.  I'm going to be using the same program I used last year from Letter of the Week.  I really liked this and we utilized quite a few of the resources outlined in the lessons.  Haylei can write her name, recognize letters, count to 20, knows all her colors, all the basics needed for PreK.  This year I'm going to also use a book recommended to us by a friend called Teach Your Child to Read in 100 Easy Lessons.  It's a very interesting book using etymology as the concept.  I was a little worried at first, but after reading through it, I think it will be a good book to use.  I'm not very fond of phonics anyway.  So it's going to be a pretty busy week ahead.

Here's what's on the plan for the week:

Weekly Breakfasts:  Cereal with Banana; Apple Cinnamon OatmealChocolate Banana Muffins

Weekly Snacks:  Strawberry Smoothies; Peanut Butter and Graham Crackers; Cheese cubes and fruit

Weekly Lunches:  Homemade Cheese Sauce with Macaroni and Peas; Quinoa Salad; Beans, Rice and Shredded Pork Burritos

Monday:  Crock Pot Pork Roast, Potatoes, Carrots, Onions (I'll share the recipe.  It's really easy.) (No Ballet Lessons this week)

Tuesday:  Pork REMAKE:  Shredded BBQ Pork over Baked Potatoes, Peas or Green Beans (Meeting 7:30)

Wednesday:  Eggs, Bacon, Grits

Thursday:  Pork REMAKE:  Shredded Pork Nachos topped with Santa Fe Salad and Chili Lime Vinaigrette (Family Worship Night)

Friday:  Subway Sandwiches and Salad

Saturday:  Family Dinner
Sunday:  Meatball Sub Sandwiches on French Sub Rolls or Cereal (not sure which)

Last week at the grocery store, I picked up 4 boneless pork chops for $2.50.  They also had ground chuck on sale for $1.49/lb.  That's the lowest I've ever seen it, so I picked up a little over 5 lbs.  I'll be hitting the grocery store on Monday in hopes of finding more reduced meats.  I'm also on the lookout for potatoes.  I like to pay no more than $2.50 for a 10 lb bag, but sometimes I don't get the cycle right and I miss out.  We'll be picking up some fresh fruit for the kids.  I love going to Aldi, but I never know what they are going to have on special for their fruit or vegetables.  So it's sort of a guessing game when I drive out there.

Sounds like a very yummy week. I never thought of using shredded pork for nachos, I'll have to try it.
