Meal Plan Monday 1/10/11

Last week we did not follow our monthly meal plan.

At all.  

But sometimes it just works out that way.  

I wasn't really "feeling it" when I posted it and figured it would change, but not that drastically!  

I had no idea we would be struck with the stomach bug and eat crackers, ginger-ale and bananas for 3 days.  But you do what you have to do.  

I had a ham in the fridge which we had gotten from my hubby's work that we had planned to eat the week before, but ended up at my parent's house so we ate over there.  Once the ham was cooked and in the fridge, we nibbled on it pretty much all last week.  I put the leftovers in the freezer for later on.  I also thawed out leftover roasted turkey from last month and made a couple of meals using it.  Super Easy Turkey Pie was a pantry meal I came up with.  Since I still have some thawed turkey in the fridge, I think we'll revamp the monthly meal plan, again, and use up that turkey.  Any leftover turkey will go back in the freezer.

Breakfast: Egg White Omelet (using Egg Beaters) with Veggies,  Cereal with Bananas,  Blueberry Muffins (using free Krusteaz) with Smoothies (using Yoplait Smoothie mix),  Cinnamon Banana French Toast Sticks with fresh bananas


Snacks:  Graham Crackers with Nutella,  Apples,  Oranges,  Peanut Butter Crackers,  Cranberry Almond No-Bake Granola Bars   

Monday:  BBQ Turkey over Mashed Potatoes (using up some free instant potatoes), canned green beans and frozen sweet peas

Tuesday:  Turkey Cranberry Wreath, canned green beans, fresh salad with apple, cranberry sauce

Wednesday:  Pancakes (in the freezer from last month)

Thursday:  Pumpkin Black Bean soup (in the freezer), Quesadillas or Grilled Cheese Sandwiches

Friday:  Thin Crust Pizza and fresh salad



This week is going to be a bit unusual as I'll be doing party prep but here's some of the cooking I'm hoping to get done (this is more or less a checklist for me to make sure I have everything):
  • bake Blueberry Muffins (free Krusteaz)
  • prepare No Bake Granola Bars (Oatmeal on sale at Walgreens $.50 a canister this week)
  • bake cakes and vegan cupcakes on Monday-freeze, freeze lemonade ice ring on Monday, Tuesday and Wednesday
  • assemble all other goodies on Friday, assemble Barbie cake and keep in the fridge, after finding room...
  • make vegan frosting on Saturday morning and frost cupcakes, store in airtight container until party, bake off piglets in blankets on Saturday afternoon, slice up the veggie pinwheels and Ham and cheese Roll-ups on Saturday

Okay, now you're just starting to scare me how similar we are and how we eat! I am going to be posting a "no-bake granola bars" recipe this week too and I'm planning on making a Mexican pasta dish and your pasta bake (ziti) too! :-) Lol, hahahah!

Sometimes I don't follow my own plan too. It's just a plan but sometimes things come up, you go out to eat or just feel like making something else.... but hey, that's okay! At least we're both prepared and we try our best!
