Meal Plan Monday 4/9/12

Last week was Spring Break for us.  We had grand plans but then my car got sideswiped in a grocery store parking lot...and I scratched my cornea super horribly...so things changed.  Tuesday I had to rush to the eye doctor for them to patch up my eyeball.  Wednesday I had to lay low with the eyeball problemo.  Thursday we observed the Memorial of Christ.  It's very special to us.  We have about 75 publishers...might be more as I'm thinking about a few new ones who moved in...but in the end we had 179 people in attendance.  That's a big turnout for us!  Friday we went strawberry picking.  Can you believe the strawberries are already ready?!?!  This crazy weather we're having.  My husband's parents came up for the weekend for a quick visit.  And took our oldest with them so he can visit family in south Georgia.  Then we're going to head down for the Strawberry Festival this weekend.  We went last year, and the year before.

On the food front, I have to get back to calorie counting.  I've been very lackadaisical about it.  And I can feel the difference in my jeans.  Not good.  But I can change it, so back to the calorie counting and exercising we go!

Here's the plan this week:

Monday:  Spaghetti with salad

Tuesday:  Bean Nachos with guacamole salad

Wednesday:  Breakfast casserole

Thursday:  Honey Lemon Pepper Chicken, rice and steamed veggies

Friday:   Subway for supper

Saturday:  Visit family so we'll eat with them

Sunday:  Subway for supper

This week for breakfast I'm going to eat Greek yogurt with apricot preserves, peanut butter sandwich on low calorie bread.  Morning snack will be apple with mozzarella cheese stick and almonds.  I will say today I'm eating my Chocolate Cherry granola for breakfast.  It's really good, but it's too high in fat.

Sorry to hear what happened. I hope it all goes well for u....we had a scare about 2 weeks ago when the same thing happened to my 5 yr old nephew. In the morning on his bus to school he said some boy hit him in the eye with a pencil...still don't know if it was an accident because when he saw my sister's reaction he said that it didn't happen that way because he's too young to get things and he didn't want to get the kid in trouble....anyway she brought him to the Dr. And the Dr. Said it was a very bad cut on his eye and his eye sight was compromised a lot to bring him back the next day to see if the eye looked as I'd it was healing and if not he would have to go to a cornea specialist ASAP...thank god a week Into it he got is sight back
