Monthly Meal Plan: January 2010

Last month while planning our monthly meal plan, I had cooked up some chicken quarters and shredded them for the different casseroles I had planned throughout the month.  This month, I'm going to try making up one casserole and making enough for 3 dinners.  In preparation for this, I have already cooked the chicken quarters in the crockpots and have them ready to go for my freezer/cooking day.  I've been looking through my copy of Joy of Cooking: 75th Anniversary Edition - 2006.  There is a pretty yummy looking recipe for Swedish Meatballs I'm planning to make and pre-cook on freezer/cooking day.  In addition to making more Mexican Style Chili Beans, Pizza dough, Chocolate Chip Granola Bars and Cinnamon Raisin Granola Bars, I'm going to make Pumpkin Chocolate Chip Muffins, Breakfast Burritos (in an effort to cut down costs for eating breakfast out) and Apple Cinnamon Pancakes.


January 2010 Meal Plan

  2. Lunch: Bean Quesadillas/Supper:  Bean Nachos Supreme
  3. Lunch: BBQ Chicken Sandwiches & Chips/Supper: Citrus Cumin Pork Roast (Crock Pot) Green Beans, Baked Potatoes
  4. Lemon Pepper Chicken, Roasted Potatoes & Veggies
  5. Chicken Rice Casserole Chicken Cordon Bleu Casserole
  6. Breakfast: Pancakes, Eggs, Grits
  7. Taco Soup
  8. Pepperoni & Pineapple Pizza with Salad
  9. Lunch: Bean Nachos/Supper: Tacos with Rice & Beans
  10. Lunch: PB&J with chips /Supper: Buffalo Chicken (Crock Pot) over Grits with celery & carrots
  11. Swedish Meatballs over Egg Noodles with peas for us & Lima beans for him
  12. Chicken Rice Casserole Turkey Tetrazzini
  13. Breakfast: Pancakes, Eggs, Grits
  14. Potato Soup (topped with bacon & cheese) recipe to follow
  15. Supper with Family
  16. Lunch & Supper with Family
  17. Supper on the road
  18. Chinese Chicken Fried Rice with steamed broccoli
  19. Creamy Swiss Chicken Casserole Turkey Tetrazzini with Peasant Bread & Green Beans
  20. Breakfast: Pancakes, Eggs, Grits
  21. Lasagna Soup with Peasant Bread
  22. BBQ Cheeseburger Pizza with Salad
  23. Lunch:Bean Quesadillas/Supper: Fiesta Enchiladas Supreme
  24. Lunch: Egg Salad Sandwiches with chips/Supper:Cranberry Pork Roast (Crock Pot) mashed potatoes with veggies
  25. Swedish Meatballs over Mashed Potatoes with peas for us & green beans for him
  26. Chicken Rice Casserole Chicken Cordon Bleu Casserole
  27. Breakfast: Pancakes, Eggs, Grits
  28. Beef Stew
  29. BBQ Chicken & Crushed Pineapple Pizza with Salad
  30. Lunch: Bean Quesadillas/Supper: Tacos with the fixings

This is in line with my goals for January to eat from our pantry.  I'm really excited and hope we don't deviate too much!

How are you converting the recipe you linked to for the citrus pork for slow cooker? I bought that Boston Butt at Publix on sale too and was going to make BBQ but that recipe looks yummy - might make that instead. :)
